Heat olive oil in a saucepan and add peas, corn, and broccoli. Sauteé for 5 minutes, then remove from heat.
Mix from raw spiralized zucchini and divide into 2 bowls.
To make the sauce, simply add all the ingredients to a food processor and process until smooth. If the sauce appears to be too thick, add a little bit of water to thin it. Add salt and/or pepper to taste.
Pour the sauce over the salad in bowls and enojy!
