Zoodle Salad With Cashew Sauce

Ingredients

For the salad:

  • 2 large zucchini peeled or unpeeled, spiralized
  • 2 tbsp olive oil
  • 1 cup frozen peas
  • 1 cup frozen corn kernels
  • 1 cup broccoli cut in small chunks

For the cashews sauce:

  • 1/2 cup raw cashews soaked in water for 4 hours or boiled for 20 minutes
  • 2 tbsp tahini
  • 2 cloves garlic peeled and chopped finely
  • 1/4 cup almond milk
  • 1 tbsp lemon juice
  • water to thin
  • salt and pepper to taste

Instructions

  • Heat olive oil in a saucepan and add peas, corn, and broccoli.  Sauteé for 5 minutes, then remove from heat.
  • Mix from raw spiralized zucchini and divide into 2 bowls.
  • To make the sauce, simply add all the ingredients to a food processor and process until smooth. If the sauce appears to be too thick, add a little bit of water to thin it. Add salt and/or pepper to taste.
  • Pour the sauce over the salad in bowls and enojy!
