Ingredients

  • 2 cups gluten-free self-raising or all-purpose flour
  • 1 tsp sea salt
  • 1 tsp baking soda
  • 3/4 cup raw brown sugar
  • 1/3 cup melted vegan butter
  • 1/3 cup soy or almond milk
  • 2 ripe bananas mashed
  • 1 cup strawberries cut in small pieces
  • 1 banana cut lengthways, for decoration
  • strawberries sliced, for decoration

Instructions

  • Preheat oven to 200°C and prepare your loaf tin. Grease it with a little bit of oil, butter or line it with a baking paper.
  • In a bowl, mix all the dry ingredients and set aside.
  • In another bowl, mash bananas with a fork and add all the wet ingredients except cut strawberries. Mix well together
  • Add the dry ingredients to the wet ingredients and mix them all together. Gently fold in cut strawberries.
  • Pour the batter in the prepared loaf tin and put the banana and strawberries on the top as a decoration.
  • Place the loaf tin in the oven and bake for 30 minutes or until the toothpick comes out clean.
