Ingredients

To make cookies:

  • 1/2 cup smooth peanut butter
  • 3 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 3 tbsp coconut oil melted
  • 3 tbsp rice flour
  • 1 tbsp gluten-free maple syrup optional

To decorate:

  • peanut butter melted
  • coconut shredded
  • ggoji berries dried
  • salted or unsalted peanuts chopped

Instructions

  • Preheat oven to 180 degrees Celsius.
  • In a bowl, mix together all the ingredients to make a cookie dough. The dough should stick together. If it's too dry and doesn't stick together, add a splash of plant-based milk.
  • Divide the dough into 10 same-size balls. Squeeze the ball with your palm or a spoon to make a 'cookie'. 
  • Line a sheet of baking paper onto a baking tray and place cookies on the tray. Put the tray in the oven and bake for 5 minutes.
  • Warm up the peanut butter to make it runny. Drizzle it over the cookies. Add some goji berries, chopped peanuts, and shredded coconut.
  • Enjoy!
