Preheat oven to 180 degrees Celsius.
In a bowl, mix together all the ingredients to make a cookie dough. The dough should stick together. If it's too dry and doesn't stick together, add a splash of plant-based milk.
Divide the dough into 10 same-size balls. Squeeze the ball with your palm or a spoon to make a 'cookie'.
Line a sheet of baking paper onto a baking tray and place cookies on the tray. Put the tray in the oven and bake for 5 minutes.
Warm up the peanut butter to make it runny. Drizzle it over the cookies. Add some goji berries, chopped peanuts, and shredded coconut.
