Silken Tofu Choc Chia Pudding

The best, easiest and creamiest chocolate chia pudding is made of silken tofu! It's absolutely delicious, smooth.... and so chocolate! Make it the night before and have a quick cold breakfast before you have to run to work or school! Or eat it as a no-refine sugar dessert every day!

Ingredients

For chocolate pudding:

  • 1 block silken tofu
  • 1/4 cup raw cocoa powder
  • 2 tbsp maple syrup
  • 1 tsp vanilla essence
  • 1/2 tsp sea salt

For white chia pudding:

  • 1 can coconut milk
  • 1/4 cup black chia seeds
  • 2 tbsp maple syrup
  • 1 tsp vanilla essence

To garnish:

  • cocoa nibs
  • dairy-free chocolate chips
  • berries

Instructions

  • Place all the ingredients for chocolate pudding into a blender and blend until very smooth. Pour it into 2 jars. Put the jars in a fridge to chill.
  • Place all the ingredients for chia pudding into a bowl and whisk them together. Pour it over the chocolate pudding and leave the jars in a fridge overnight or for at least 2 hours, until chia seed pudding thickens enough.
  • Garnish with dairy-free chocolate chips, cocoa nibs, and your favourite berries (frozen or fresh).
