If you like salads, this (almost) raw zoodle salad (made of spiralized raw zucchini) with cashew sauce is a fantastic summer meal for you which you should definitely try out!
Summer and salads are a great match! Why? They are healthy, don’t require hours of cooking and preparations, they are crunchy and light! So who’s ready for some delicious salad this hot summer?
Because summer is a celebration of raw, uncooked or very little cooked food, it’s an amazing time to eat an abundance of fresh veggies and fruit. It pops out everywhere! If you are lucky enough and have your own garden where you grow your own veggies, it’s even easier for you to get healthier and fit this summer!
Well, to be honest, I am not this lucky to have my own garden but I still manage to get a few kinds of herbs, tomatoes, beans, and other veggies in little garden and window boxes full of soil in my little terrace. How awesome is that?!
Personally, I love greens, green veggies, and fruits. I could it eat them raw or cooked, depends what’s better in that sort of situation. For this salad, I decided to make RAW zucchini noodles and I cooked the rest of the veggies. So this salad is not raw, but it’s partly raw. If you wish to make this salad raw, just skip the step of cooking and sautĆ©ing veggies, and you will be fine.
Since I bought my spiralizer, I can’t even imagine preparing zucchini other ways than in spirals! If you don’t have your spiralizer yet, you should definitely get one! It’s very handy and compact which is great especially when you have a small kitchen (like I do).
Oh, and I can’t express how much I love nuts, especially cashews and walnuts! This salad recipe wouldn’t be complete without some delicious dressing or sauce, of course. And that’s why I opted for NUT sauce which goes very well with raw zucchini noodles and other veggies.
For this sauce, you will need a pack of raw cashews. If you are one of those people who like to prepare things in advance, you can soak your cashews in the water a night before making the salad. The other option is to boil cashews for 20 minutes which will give almost the same result as soaking them.
To make the cashew sauce, you need good-quality unhulled tahini. You also need plant-based milk of your choice. I used almond milk which is my favourite and tastes really delicious.
Zoodle Salad With Cashew Sauce
Ingredients
For the salad:
- 2 large zucchini peeled or unpeeled, spiralized
- 2 tbsp olive oil
- 1 cup frozen peas
- 1 cup frozen corn kernels
- 1 cup broccoli cut in small chunks
For the cashews sauce:
- 1/2 cup raw cashews soaked in water for 4 hours or boiled for 20 minutes
- 2 tbsp tahini
- 2 cloves garlic peeled and chopped finely
- 1/4 cup almond milk
- 1 tbsp lemon juice
- water to thin
- salt and pepper to taste
Instructions
- Heat olive oil in a saucepan and add peas, corn, and broccoli. SauteƩ for 5 minutes, then remove from heat.
- Mix from raw spiralized zucchini and divide into 2 bowls.
- To make the sauce, simply add all the ingredients to a food processor and process until smooth. If the sauce appears to be too thick, add a little bit of water to thin it. Add salt and/or pepper to taste.
- Pour the sauce over the salad in bowls and enojy!
