Absolutely delicious, soft banana bread can be made even better! How? By adding a few strawberries you change the taste for better! It’s vegan, gluten-free, and so fluffy and delicious!

So… I decided to bake an easy and tasty banana cake. I knew bananas and strawberries go together very well and that they would make great banana bread. So I tried!
In case you didn’t know, bananas contain a lot of potassium, magnesium, and dietary fibre. They help you digest better and improve your overall digestion health. Frozen bananas are a great substitute for ice cream or refined sugars.
If you crave ice cream, make sure you always have a couple of frozen bananas in your freezer. That’s a way how you can make nice cream fast and easily. Only add bananas to your food processor or a blender with other frozen or fresh fruit or even vegetables. Add a splash of non-dairy milk, coconut yoghurt or natural colouring, such as blue spirulina, green spirulina powder or acai powder.
And why should you eat strawberries?? Not only are they extremely tasty, but they also give you a lot of water. They are an amazing source of antioxidants, vitamins C, and other nutrients. I just love them!
Make sure you use ripe bananas as they are even easier to digest than green bananas. You can store ripe bananas in a fridge as you would with green bananas so they don’t lose their vitamins and nutrients ads they ripe.
If you don’t want to use brown (cane) sugar, another alternative is to use coconut sugar. I know, you may think it’s still sugar, but sometimes it’s believed that coconut sugar is more beneficial for our health and contains more nutrients.
To keep this recipe gluten-free, use all-purpose gluten-free flour. In case you wish your strawberry bread to be fluffier, I recommend using self-raising gluten-free flour. Most of the gluten-free flours don’t affect the taste at all and you wouldn’t even know that your bread is gluten-free.

Ingredients
- 2 cups gluten-free self-raising or all-purpose flour
- 1 tsp sea salt
- 1 tsp baking soda
- 3/4 cup raw brown sugar
- 1/3 cup melted vegan butter
- 1/3 cup soy or almond milk
- 2 ripe bananas mashed
- 1 cup strawberries cut in small pieces
- 1 banana cut lengthways, for decoration
- strawberries sliced, for decoration
Instructions
- Preheat oven to 200°C and prepare your loaf tin. Grease it with a little bit of oil, butter or line it with a baking paper.
- In a bowl, mix all the dry ingredients and set aside.
- In another bowl, mash bananas with a fork and add all the wet ingredients except cut strawberries. Mix well together
- Add the dry ingredients to the wet ingredients and mix them all together. Gently fold in cut strawberries.
- Pour the batter in the prepared loaf tin and put the banana and strawberries on the top as a decoration.
- Place the loaf tin in the oven and bake for 30 minutes or until the toothpick comes out clean.
