When a hot summer hits, everyone needs a little refreshment, right?! Cucumber is known to be one of the best refreshing vegetables. Plus, it contains so much vitamin K! Pretty healthy, huh? This extra refreshing cucumber lemonade with a hint of lemon juice is what you need for hot days!


Cucumber is such a versatile, healthy, and juicy vegetable (isn’t it fruit after all??!). It contains so much water (up to 96%, can you believe that?!) and therefore it’s amazing for staying hydrated. That comes very handily especially during summertime and very hot days.
When I say versatile, I mean truly VERSATILE. You can eat cucumber raw, you can cook it, steam it, slice it, pickle it, dehydrate it… It’s great in salad, as raw sushi, as a side dish, in burgers, and of course, as a drink.
This refreshing cucumber lemonade with lemon juice is just another extremely fresh and tasty drink I made. Do you remember my Cucumber And Watermelon Lemonade I have made some time ago?? A super easy and super fresh drink I am able to drink anytime!!

And why should you eat cucumber?? Because cucumber:
- is very high in several nutrients, such as vitamin K, vitamin C, magnesium, potassium, and manganese
- and very low in calories and fat (contains 0!! FAT)
- like I already mentioned, it keeps you hydrated all day long. That’s good especially if you struggle to meet your daily fluid (water) intake
- can help you lose weight! Because it(s mostly water, it can easily replace other high-calorie foods that u may excessively consume!
- contains many very useful antioxidants that fight against free radical that might be very harmful to your organism
- as mentioned above, cucumber is so versatile that can be added to almost anything, cooked or raw. It’s very juicy, refreshing, and yummy!

To make this delicious cucumber lemonade, you need the only cucumber (preferably English cucumber), freshly squeezed lemon juice, club soda, and a little bit of brown sugar. As a garnish, you will use a handful of fresh mint leaves and fresh basil leaves.
If you wish to have am extra refreshing cucumber lemonade, you can add a few ice cubes or crushed ice, too!

Refreshing Cucumber Lemonade
Equipment
- Strainer
Ingredients
- 2 large cucumbers cut in chunks + sliced for garnish
- 2 1/2 cups soda
- 3 tbsp brown sugar
- 1/4 cup lemon juice
- fresh basil leaves for garnish
- fresh mint leaves for garnish
- ice cubes for a cold drink
Instructions
- Add cucumbers to a blender and blend until smooth.
- Optional step: Strain the pureéd cucumbers through a strainer if you wish to have a clearer liquid.
- Add lemon juice, brown sugar, and soda. Mix it well.
- Pour into glasses and chill it for 10 minutes. Garnish with fresh mint and basil leaves, and cucumber slices.
- Enjoy chilled!
