Basically, peanut butter is a paste made of ground dry-roasted peanuts. It usually contains a small amount of salt, sweetener, and emulsifiers. You can buy it smooth or crunchy. For this recipe, I use Bega Smooth Peanut Butter.

Cocoa Peanut Butter Cookies
Ingredients
To make cookies:
- 1/2 cup smooth peanut butter
- 3 tbsp cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 3 tbsp coconut oil melted
- 3 tbsp rice flour
- 1 tbsp gluten-free maple syrup optional
To decorate:
- peanut butter melted
- coconut shredded
- ggoji berries dried
- salted or unsalted peanuts chopped
Instructions
- Preheat oven to 180 degrees Celsius.
- In a bowl, mix together all the ingredients to make a cookie dough. The dough should stick together. If it’s too dry and doesn’t stick together, add a splash of plant-based milk.
- Divide the dough into 10 same-size balls. Squeeze the ball with your palm or a spoon to make a ‘cookie’.
- Line a sheet of baking paper onto a baking tray and place cookies on the tray. Put the tray in the oven and bake for 5 minutes.
- Warm up the peanut butter to make it runny. Drizzle it over the cookies. Add some goji berries, chopped peanuts, and shredded coconut.
