I am sure you have probably tried to add some spices to your Christmas cookies. I bet you use especially cinnamon, maybe nutmeg (all spices). I really recommend you to add cardamom as it’s slightly spicy and transforms somewhat boring cookies to really something extraordinary and outstanding.
Because I also try to avoid using to much flour (especially for baking it might be a problem), I always look for ways ho I can replace it. For baking I usually use some nut meal. It has almost the same consistency like flour, and it’s healthier.
For this recipe, I used linseed (flaxseed) meal and almond meal. If you don’t want to replace all the flour completely, make sure to use gluten-free flour for keeping this recipe gluten-free.
I also tried to keep these Christmas cookies sugar-free. I mean, they are almost sugar-free. The icing is made of powdered sugar so it’s very sugary but cookies themselves ARE SUGAR-FREE! How? I used sweetener instead of real sugar and you can do it too! You won’t miss sugar on a cookie dough consistency and it tastes as amazing as it would with sugar!
Are you not afraid to use sweetener? Try for example liquid stevia sweetener or powdered stevia sweetener. Just follow the instruction on a package!

CRISPY VEGAN ALMOND CHRISTMAS STARS
Ingredients
For cookies:
- 1 cup linseed (flaxseed) meal
- 1 cup almond meal
- 1/2 cup pecans
- 1/2 cup hazelnuts
- 1/2 cup plain gluten-free flour for example rice flour
- 1 tsp cardamom
- 1 tsp cinnamon
- 1/2 tsp kosher sea salt
- 32 drops sweetener (2 tbsps)
- juice from 1 orange
- zest from 1 orange
For icing:
- 1 cup powdered sugar
- 2 tsp almond milk
- 1 tsp cardamon
- 1/2 tsp turmeric
Instructions
- Preheat oven to 180 Celsius degrees.
- Place linseed meal, almond meal, flour, pecans, hazelnuts, spices, orange zest, orange juice, sweetener, and salt in a food processor. Process until the dough holds together and it’s not sticky.
- Quickly knead the dough with your hands and place the dough on a floured baking paper. Start rolling out the dough with a floured rolling pin. Cut out your desired shapes with cookie cutters.
- Put the cookies onto a sheet of baking paper and bake them in the preheated oven for 5 minutes.
- Let the cookies cool down a little bit and start preparing the icing. Mix together powdered sugar, almond milk, and spices. Cover the cookies with the icing mixture and let them cool down completely.
