Sometime ago I found a new passion – preparing one-pot soups, stews, and stir-fries. I think it’s a great way to save your time that you have to spend on cleaning kitchen and doing dishes. Plus, these recipes are usually not complicated at all!
Like this recipe for amazing Caribbean black bean soup. It’s so easy, yet so delicious. And everything is made in just one saucepan!

I’ve done this soup some time ago and still remember its super rich and a little bit of sweet taste. That’s because I used my favourite spice – smoked paprika. If you want to give this soup even sweeter taste, replace smoked paprika with sweet paprika!

Of course, I cannot stress how essential is to use all other spices in this recipe. Oregano, cumin, coriander, bay leaves, and cayenne pepper… You need it all to create the fabulous black bean soup! (You can leave cayenne pepper out if you don’t like your soup hot.)

Obviously, the main ingredients for the black bean soup are black beans. The best are organic black beans which can be purchased via Amazon. Depending on a country you live in, they can be quite an expensive item on your shopping list. I always try to buy them in bulk (usually in 12-pack).
If you like your soup a bit smoother, it’s possible to mix it with a hand mixer for a few seconds, just until you reach a nice, smooth consistency but you can still see some whole black beans.
Black Bean Soup (One Pot)
Ingredients
- 2 tbsp olive oil
- 1 yellow onion peeled andchopped
- 3 cloves garlic peeled and diced finely
- 1 red capsicum chopped
- 1 red hot chilli pepper seeds removed, finely diced
- 2 bay leaves
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1 tsp oregano
- 1/4 tsp cayenne pepper
- 1 can diced tomatoes
- 6 cups vegetable stock
- 2 cans black beans drained and rinsed
Instructions
- In a large saucepan, heat olive oil and add onion and garlic. Sauteé for 2 minutes.
- Add red capsicum and red hot chili pepper. Sauteé for 1 more minute. Add all the spices and stir for 1 minute.
- Add diced tomatoes and vegetable stock, bring to boil and simmer for 10 minutes.
- Add black beans and simmer for 2-3 minutes. Remove and discard bay leaves.
- For a smoother consistency, mix the soup with a hand mixer. If you like your soup thicker, you can skip this step.
- Divide into bowls and enjoy!
