If you want SUCH breakfast, you definitely should give a go this absolutely delicious and quick toast with smashed avocado, homemade grilled tomatoes, and balsamic vinegar!

I always like to add a little bit of spice to my recipes. Even in this recipe, you notice I add chili flakes. They go very well with avocado and tomatoes.
To keep this recipe gluten-free, use some yummy gluten-free bread. In a case you want to use normal bread, I recommend some whole grain bread with seeds (for example sesame seeds).

The specialty for this toast is to use balsamic vinegar. It’s a really nice addition to a smashed avocado and grilled tomatoes. If you want something really special, swop balsamic vinegar for caramelized fig vinegar!

Avocado Toast With Grilled Tomatoes
Ingredients
- 4 slices gluten-free or wholegrain toast bread
- 1 large and ripe avocado peeled, stone removed, and smashed
- 2 large tomatoes sliced
- 1/4 cup balsamic vinegar or caramelized fig vinegar
- 1 tbsp extra virgin olive oil
- 1/4 cup fresh basil leaves
- 1 tsp chili flakes
- salt, pepper to taste
Instructions
- Preheat oven to 200 degrees Celsius. Place slices of tomatoes on a parchment paper on a baking tray and drizzle them with olive oil, salt, and pepper, if using. Grill them for 5 minutes.
- Add smashed avocado on bread slices. Add grilled tomato slices, chili flakes, basil leaves, and more salt and/or pepper due to your taste. Drizzle with balsamic vinegar or caramelized fig.
