Ingredients

  • 2 very ripe avocados peeled, stone removed
  • 1/2 cup walnuts
  • 1/2 cup extra virgin olive oil
  • 1 cup basil leaves
  • 3 cloves garlic peeled
  • 2 tbsp lemon juice
  • salt and pepper to taste
  • 1 tbsp nutritional yeast optional
  • 1 pack gluten-free spaghetti
  • basil leaves to serve
  • dairy-free parmesan to serve

Instructions

  • In a saucepan bring water to boil. Add gluten-free pasta and cook according to instructions, usually around 10 minutes. Pasta should be al dente. Drain and add a little bit of olive oil so the pasta doesn't stick together.
  • In a food processor, add all the ingredients for pesto. Taste and add salt and/or pepper according to your taste.
  • Mix pasta with your avocado pesto. Serve with fresh basil leaves and dairy-free parmesan cheese.
  • Enjoy!
