Ingredients

  • 2 large sweet purple potatoes cut in cubes
  • 1 medium red onion peeled and chopped
  • 4 cloves garlic peeled and chopped
  • 2 tbsp olive oil
  • 1/4 cup frozen corn kernels
  • 1 cup mushrooms sliced
  • 2 large tomatoes pureéd
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1 tsp smoked paprika
  • 1 tsp red chilli flakes
  • 2 cup vegetable stock
  • 1 can diced tomatoes
  • 1 can 5 beans mix drained and rinsed
  • 1 cup spinach leaves chopped
  • salt and pepper to taste

Instructions

  • Cut potatoes in small cubes. Chop onion, garlic cloves, and slice mushrooms. 
  • Heat olive oil in a large saucepan and add onion and garlic cloves. Sauteé for 2 minutes, then add all the spices. Sauteé for another 1 minute.
  • In a food processor, pureé tomatoes and add them to the sauce pan. Also add potatoes, diced tomatoes, and vegetable stock. Cook everything over a medium heat for 10-15 minutes or until potatoes are quite tender. Then lower the heat to a minimum.
  • Add mushrooms, beans, and spinach. Increase heat to medium again and cook everything for 3 minutes. Add salt and pepper if needed. Serve with freshly chopped parsley.
