Cut potatoes in small cubes. Chop onion, garlic cloves, and slice mushrooms.
Heat olive oil in a large saucepan and add onion and garlic cloves. Sauteé for 2 minutes, then add all the spices. Sauteé for another 1 minute.
In a food processor, pureé tomatoes and add them to the sauce pan. Also add potatoes, diced tomatoes, and vegetable stock. Cook everything over a medium heat for 10-15 minutes or until potatoes are quite tender. Then lower the heat to a minimum.
Add mushrooms, beans, and spinach. Increase heat to medium again and cook everything for 3 minutes. Add salt and pepper if needed. Serve with freshly chopped parsley.
