Crispy Vegan Almond Christmas Stars

Ingredients

  • 2 cups almond meal
  • 1/4 cup brown sugar
  • 2 tsp vanilla essence
  • 1 tbsp flaxseed meal
  • 2 tbsp warm water
  • 1 tbsp ground cinnamon
  • 2 tbsp almond milk
  • powdered sugar to decorate

Instructions

  • Whisk together warm water and flaxseed meal. Set it aside
  • In a bowl, mix together almond meal, ground cinnamon, and brown sugar. Then add flaxseed mixture and vanilla essence. If it¨s to hard to mix the dough by hand, place it in a food processor. Pulse a few times. 
  • Add 1 tbsp almond milk. Pulse again. Check if the dough is not too dry or not too sticky. If it seems to be too dry add another tbsp almond milk.
  • Make a ball of the dough and wrap it in a foil cling. Place it in a fridge for 15 minutes.
  • Preheat oven to 180 Celcius Degrees.
  • Place the chilled dough in between two sheets of baking paper and roll it with a rolling pin. The dough should be around 5-6 mm thin. Don't make it too thin or the stars will be too crispy. Cut the stars out with a star-shaped cookie cutter.
  • Place the stars onto a baking sheet lined in a baking tray and place it in the oven. Bake the stars for 5 minutes. Let the cookies cool down.
  • Dust the cookies with powdered sugar through a sifter.

Notes

Store the cookies in an airtight container for up to one week.
