They gluten-free and vegan Christmas stars are a healthy option when you dive into many Christmas cookies! Low in calories, they smell and taste like freshly ground almonds! No flour needed!
Whisk together warm water and flaxseed meal. Set it aside
In a bowl, mix together almond meal, ground cinnamon, and brown sugar. Then add flaxseed mixture and vanilla essence. If it¨s to hard to mix the dough by hand, place it in a food processor. Pulse a few times.
Add 1 tbsp almond milk. Pulse again. Check if the dough is not too dry or not too sticky. If it seems to be too dry add another tbsp almond milk.
Make a ball of the dough and wrap it in a foil cling. Place it in a fridge for 15 minutes.
Preheat oven to 180 Celcius Degrees.
Place the chilled dough in between two sheets of baking paper and roll it with a rolling pin. The dough should be around 5-6 mm thin. Don't make it too thin or the stars will be too crispy. Cut the stars out with a star-shaped cookie cutter.
Place the stars onto a baking sheet lined in a baking tray and place it in the oven. Bake the stars for 5 minutes. Let the cookies cool down.
Dust the cookies with powdered sugar through a sifter.
