5-Minute Spicy Avocado Hummus

You can make this avocado hummus very spicy, medium spicy, light spicy or not spicy at all. It's all up to you! 1 tsp cayenne pepper which I used for this recipe makes this avocado hummus medium, spicy. Adjust according to your taste!

Ingredients

For hummus:

  • 1 avocado medium, peeled and pitted
  • 1 cup canned chickpeas rinsed and drained
  • 1 tbsp tahini
  • 2 1/2 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup fresh coriander leaves
  • 1/2 cup spinach leaves
  • 2 tbsp olive oil
  • 1/2 - 1 tsp cayenne pepper/ground chilli
  • 1 tbsp gluten-free maple syrup optional

To serve:

  • 8 slices gluten-free wholegrain bread
  • pine nuts to garnish

Instructions

  • In a food processor, blend together all the ingredients for hummus.
  • If the hummus seems to be too thick, add a little bit of water.
  • Spread over the slices of bread. Garnish with a few pine nutes.
  • If the hummus is too bitter (beacuse of a strong nutty tahini flavour), add 1 tbsp gluten-free maple syrup.
  • Enjoy!
