Put the carrots into a saucepan with boiling water. Cover and cook the carrots for 10 minutes over the medium heat. Then drain and set aside. Let the carrots cool down.
In a food processor, combine all the ingredients plus cooled carrots. Make dough which should hold nicely together but it shouldn't be too sticky.
If the dough is too sticky, add a little bit more almond meal but again, not too much otherwise the dough wouldn't hold together.
With your slightly wet hands, start rolling the small round bites. Place them on a plate (spread them a little bit) and put them in a fridge. Leave them there for at least 15 minutes.
