Ingredients

For carrot bites:

  • 4-5 medium carrots peeled and cut into small chunks
  • 1/2 cup dates pitted
  • 1/2 cup almond or peanut butter
  • 1/2 tsp sea salt
  • 1 tsp ground cinnamon
  • 1 tsp all spice (nutmeg)
  • 1 cup + 2 tbsp almond meal

For icing:

  • 3/4 cup powdered sugar
  • 1 tsp coconut milk
  • 1/4 tsp vanilla extract optional

Instructions

For carrot bites:

  • Put the carrots into a saucepan with boiling water. Cover and cook the carrots for 10 minutes over the medium heat. Then drain and set aside. Let the carrots cool down.
  • In a food processor, combine all the ingredients plus cooled carrots. Make dough which should hold nicely together but it shouldn't be too sticky.
  • If the dough is too sticky, add a little bit more almond meal but again, not too much otherwise the dough wouldn't hold together.
  • With your slightly wet hands, start rolling the small round bites. Place them on a plate (spread them a little bit) and put them in a fridge. Leave them there for at least 15 minutes.

For icing:

  • Mix all the ingredients together. Set the mixture aside for a few minutes. Then drizzle over the carrot bites or cover them with icing entirely. Place the carrot bites in the fridge for another 15 minutes.
