Ingredients

  • 1 medium head of cauliflower
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 4 cloves garlic 1) minced
  • 2 ripe avocados mashed
  • 1/4 cup lime juice
  • 1/4 cup jalapenos diced
  • 1/4 tsp chili flakes
  • 1 cup fresh coriander leaves chopped
  • Salt, pepper

Instructions

  • Make cauliflower rice: Place cauliflower in a food processor and process until cauliflower crumbles and resembles rice. As another option, grate your cauliflower roughly, using a grater. Set aside.
  • Heat olive oil in a frying pan and add onion and garlic. Sauteé for 2 minutes. Add cauliflower rice and cook for another 5 minutes over a medium heat.
  • Meanwhile, mash avocados with a fork in a bowl. Add lime juice, coriander, chilli flakes, and jalapenos. Mix and taste. Add salt and/or pepper according to your liking.
  • Remove the cauliflower rice from a heat and stir into mashed avocados mixture. Taste and add more salt and/or pepper.
  • Serve as an appetizer, main dish or a dip for tortilla chips.

Notes

1) Garlic cloves can be substituted with 1-2 tbsp garlic paste.
