Ingredients

  • 2 tbsp olive oil extra virgin
  • 1 yellow onion peeled and chopped
  • 1 red capsicum sliced
  • 4 cloves garlic peeled and chopped
  • 1 carrot sliced
  • 2 tbsp yellow or red curry paste
  • 1 can coconut milk
  • 1 tbsp tamari sauce
  • 4 cup water
  • 1 block firm or extra firm tofu cut in small chunks
  • 1 pack thin rice noodles
  • fresh coriander leaves to garnish
  • lime wedges to garnish
  • 1 small red chilli pepper to garnish

Instructions

  • Heat oil in a saucepan and add onion, capsicum, garlic, and carrot. Sauteé for 1-2 minutes. Add tofu, coconut milk, water, tamari sauce, and curry paste. Cook on a medium heat for 10 minutes.
  • Lower the heat to minimum and add rice noodles. Don't cook, only simmer until the noodles become tender.
  • Divide into 2 bowls and garnish with fresh coriander leaves, lime wedges, and chopped red chilli peppers. Enjoy!
