Ingredients
2tbspolive oilextra virgin
1yellow onionpeeled and chopped
1red capsicumsliced

2tbspyellow or red curry paste
1cancoconut milk
1tbsptamari sauce
4cupwater
1block firm or extra firm tofucut in small chunks
1packthin rice noodles
fresh coriander leavesto garnish

Instructions
Heat oil in a saucepan and add onion, capsicum, garlic, and carrot. Sauteé for 1-2 minutes. Add tofu, coconut milk, water, tamari sauce, and curry paste. Cook on a medium heat for 10 minutes.
Lower the heat to minimum and add rice noodles. Don't cook, only simmer until the noodles become tender.
Divide into 2 bowls and garnish with fresh coriander leaves, lime wedges, and chopped red chilli peppers. Enjoy!
