Gingerbread Doughnuts

Ingredients

For doughnuts:

  • 1 1/4 cup plain gluten-free flour blend
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp ginger powder
  • 1/2 tsp nutmeg
  • 1 tbsp raw cacao powder
  • 1/2 tsp coarse sea salt
  • 1 cup plant-based milk
  • 1 tsp apple cider vinegar
  • 1/4 cup maple syrup

For cinnamon glaze:

  • 1 1/2 cup icing powdered sugar
  • 2 tsp coconut milk
  • 1 tsp ground cinnamon
  • 1/2 tsp maple syrup

Instructions

  • Preheat the oven for 200 degrees Celsius.
  • Mix all the dry ingredients in a bowl. Make a well in the middle and add the rest of the ingredients one by one, stirring constantly until the creamy dough is formed with no lumps.
  • If necessary, grease a doughnut pan a little bit. Pour the dough into a doughnut pan and bake for 10 minutes. The dough is ready when a wooden stick comes out clean.
  • Let the doughnuts cool down while you make a cinnamon glaze. Whisk all the ingredients together in a large bowl and dip your doughnuts in it. You might need to dip them twice until they are evenly covered with the glaze.
