Raw Berry Slices

These easy raw berry slices are the great option for your Valentine's Day as a dessert. They are gluten-free, vegan, and very easy to make. You just need a blender!

Ingredients

For the crust:

  • 1/2 cup dates pitted
  • 1/2 cup raw almonds
  • 1/4 tsp sea salt
  • 1/4 cup dried cranberries
  • water

For the blueberry layer:

  • 1/2 cup cashews soaked for 4 hours or boiled for 20 minutes
  • 1/2 cup blueberries frozen or fresh
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

For the raspberry layer:

  • 1/2 cup cashews soaked for 4 hours or boiled for 20 minutes
  • 1/2 cup raspberries frozen or fresh
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

To decorate:

  • 50g dairy-free dark chocolate melted
  • blueberries
  • raspberries

Instructions

  • Make a crust first. Add all the ingredients to a blender and blend until sticky dough is formed. Press it in a cake tray and set it aside.
  • Make the blueberry layer: add all the ingredients to a blender and blend until smooth. Pour over the crust and set it aside.
  • Make the raspberry layer: add all the ingredients to a blender and blend until smooth. Pour over the blueberry layer and place it in a freezer for 1 hour to firm up.
  • After 1 hour, melt chocolate in a waterproof bowl over the bowl with boiling water. Drizzle it on the top of the slices and let it cool down.
