Ingredients

  • 1 cup self-raising gluten-free flour
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 cup plant-based milk (almond is good)
  • 1/4 cup maple syrup
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 2 tbsp beetroot juice (from canned beetroot)
  • fresh berries for topping
  • maple syrup for topping
  • pomegranate seeds for topping
  • dairy-free chocolate chips for topping
  • sugar stars for topping

Instructions

  • In a bowl mix all the dry ingredients first. 
  • In another bowl, mix all the wet ingredients.
  • Now add all the mixed dry ingredients in the bowl with wet ingredients and whisk gently to combine.
  • Set aside for about 10 minutes.
  • Pour the batter in a hot frying pan and fry about 2 minutes each side. You should make about 8 chubby pancakes.
  • Top the pancakes with your favourite toppings - fresh berries, pomegranate seeds, sugar stars and drizzle with maple syrup.
