Ingredients

For jackfruit 'meat':

  • 1 tbsp olive oil
  • 1 medium yellow onion peeled and chopped
  • 3 cloves garlic peeled and finely diced
  • 1 tbsp ginger paste
  • 2 tbsp soy or tamari sauce
  • 2 tbsp peanut butter
  • 1 tbsp maple syrup
  • 1 tbsp white rice vinegar
  • 1 can jackfruit
  • 1 tsp chilli flakes optional

To make burgers:

  • 4 gluten-free buns
  • shredded pickled red cabbage
  • shredded lettuce
  • avocado sliced

Instructions

  • Drain jackfruit and set it aside.
  • In a saucepan, heat olive oil. Add onion, garlic, and ginger paste. Sauteé for about 2 minutes, then add soy sauce, peanut butter, vinegar, and maple syrup. Sauteé for another 3 minutes.
  • Add jackfruit. Try to break it with a wooden spatula or a cooking spoon in a saucepan so it resembles pulled pork. Cook for another 15 minutes. Add chili flakes, if using.
  • Assemble your burgers: Toast your burger buns according to your liking. Add shredded lettuce, avocado slices, jackfruit mix and top it with shredded pickled red cabbage.
