In a saucepan, heat olive oil. Add onion, garlic, and ginger paste. Sauteé for about 2 minutes, then add soy sauce, peanut butter, vinegar, and maple syrup. Sauteé for another 3 minutes.
Add jackfruit. Try to break it with a wooden spatula or a cooking spoon in a saucepan so it resembles pulled pork. Cook for another 15 minutes. Add chili flakes, if using.
Assemble your burgers: Toast your burger buns according to your liking. Add shredded lettuce, avocado slices, jackfruit mix and top it with shredded pickled red cabbage.
