Raw Vegan Mango And Pineapple Slices

Ingredients

For the crust:

  • 1 cup almond meal
  • 1/2 cup raw walnuts
  • 1 cup dates pitted
  • 1/4 tsp sea salt
  • water if needed

For the yellow layer:

  • 1 small pineapple cut in chunks
  • 2 small mangos peeled, stone removed
  • 2 tsp agar-agar powder
  • 1 tbsp maple syrup optional

For garnish:

  • fresh mint leaves
  • sugar stars
  • coconut flakes

Instructions

  • Start with making crust: Add all the ingredients to a food processor and process until a sticky but still crunchy paste is formed. If the dough is too dry and doesn't stick together add a little bit of water.
  • Press the dough in bar moulds or any other rectangular bakeware. Set is aside i a freezer or fridge while making the yellow mango layer.
  • To make the yellow mango layer, add mango and pineapple to a food processor and processor until very smooth.
  • Mix agar-agar powder with 1 tbsp of mango mix until agar-agar is fully dissolved. Transfer it into a small saucepan and bring it to boil. Boil it for 1 minute, stirring constantly. Turn off the heat and let it cool down a little bit.
  • Add agar-agar mix to the mango mix and combine together. Don't blend it!
  • Pour the mango layer over the crust and place it in a freezer for at least 1 hour. 
  • Decorate with fresh mint leaves, coconut flakes, and sugar stars. Enjoy!
