Start with making crust: Add all the ingredients to a food processor and process until a sticky but still crunchy paste is formed. If the dough is too dry and doesn't stick together add a little bit of water.
Press the dough in bar moulds or any other rectangular bakeware. Set is aside i a freezer or fridge while making the yellow mango layer.
To make the yellow mango layer, add mango and pineapple to a food processor and processor until very smooth.
Mix agar-agar powder with 1 tbsp of mango mix until agar-agar is fully dissolved. Transfer it into a small saucepan and bring it to boil. Boil it for 1 minute, stirring constantly. Turn off the heat and let it cool down a little bit.
Add agar-agar mix to the mango mix and combine together. Don't blend it!
Pour the mango layer over the crust and place it in a freezer for at least 1 hour.
Decorate with fresh mint leaves, coconut flakes, and sugar stars. Enjoy!
