Raw Blueberry Doughnuts

These easy raw vegan doughnuts are a great dessert or a snack after a workout because they are packed with protein! Blueberry glaze adds an amazing fresh taste! Also a great dessert for Valentine's day!

Ingredients

For doughnuts:

  • 1 cup raw unsalted cashews
  • 1 tsp vanilla extract
  • 2 heaped scoopes vanilla pea protein
  • 2 tbsp dried goji berries
  • 1 cup almond meal
  • water

For blueberry glaze:

  • 3/4 cup cashews soaked overnight or boiled for 20 minutes
  • 1/2 cup blueberries fresh or frozen
  • 1 tbsp lemon juice
  • 1/3 canned coconut milk

For toppings:

  • fresh blueberries
  • shredded coconut
  • dairy-free chcocolate chips
  • sugar stars

Instructions

  • Add all the ingredients for doughnuts to a food processor and process on high speed until dough crumbles. Add a little bit of water to make the dough sticky. It should hold together easily.
  • Press the dough in doughnut moulds and place it in a fridge while making the blueberry glaze.
  • Add all the ingredients for the blueberry glaze to a food processor and blend until completely smooth.
  • Pour the glaze in a shallow dish and dip the doughnuts in it.
  • Decorate the doughnuts with your favourite toppings, for example, dairy-free chocolate chips, fresh blueberries, shredded coconut, and sugar stars.
