Blueberry And Blackberry Raw Tarts

Ingredients

For base:

  • 10 dates dried or pre-soaked fresh, pitted
  • 1 cup raw almonds
  • 1/2 tbsp ground cinnamon
  • 1 tsp vanilla extract
  • 3 tbsp coconut oil melted
  • 3 tbsp maple syrup

For filling:

  • 1 cup blueberries frozen or fresh
  • 1 cup blackberries frozen or fresh
  • 1 tsp vanilla extract
  • 1/4 cup full fat coconut milk or coconut cream
  • 1 tbsp shredded coconut
  • 1 tbsp maple syrup optional
  • blackberries and blueberries to decorate

Instructions

  • Start with the base: Mix all the ingredients for the base in a food processor and process on high speed until well combined. Press the base at the bottom of 4 mini tarts. Put the tarts in a fridge or freezer while you make the filling.
  • Place all the ingredients for the filling in a food processor. Blend until very smooth. Remove the tarts from the freezer/fridge.  Pour the filling over the base.  
  • Return tarts back to the fridge/freezer. Leave the tarts in the fridge/freezer for 4 hours or until completely firm.
  • Remove the tarts from the fridge/freezer and top with blackberries and blueberries.
  • Enjoy!

Notes

You can store the tarts in a freezer up to 10 days.
