Ingredients
For base:
10datesdried or pre-soaked fresh, pitted
1cupraw almonds
1/2tbspground cinnamon
1tspvanilla extract
3tbspcoconut oilmelted
3tbspmaple syrup
For filling:
1cupblueberriesfrozen or fresh
1cupblackberriesfrozen or fresh
1tspvanilla extract
1/4cupfull fat coconut milk or coconut cream
1tbspshredded coconut
1tbspmaple syrupoptional
blackberries and blueberriesto decorate
Instructions
Start with the base: Mix all the ingredients for the base in a food processor and process on high speed until well combined. Press the base at the bottom of 4 mini tarts. Put the tarts in a fridge or freezer while you make the filling.
Place all the ingredients for the filling in a food processor. Blend until very smooth. Remove the tarts from the freezer/fridge. Pour the filling over the base.
Return tarts back to the fridge/freezer. Leave the tarts in the fridge/freezer for 4 hours or until completely firm.
Remove the tarts from the fridge/freezer and top with blackberries and blueberries.
