For true zucchini lovers, I have the perfect recipe. Raw, vegan, gluten-free zucchini ‘carpaccio’! Made of nothing but fresh crunchy zucchini, herbs, sprouts, and yummy lemon dressing! So easy, so good!
Zucchini is a perfect vegetable for raw salads and raw dinners. Zucchini can be easily converted into noodles (zoodles) with the help of a spiralizer. I made Zoodle Salad With Cashew Sauce which was incredibly yummy and surprisingly filling!
Another option is to prepare Raw Cabbage And Zucchini Salad. Of course, if you like cabbage! This salad is very crunchy, and it gives you many vitamins. It also hydrates you well.
Is zucchini healthy?
If you haven’t discovered a passion for eating zucchini yet, you certainly should. Zucchini is indeed very healthy, nutrient-dense food that you definitely want to eat.
If you suffer from constipation, zucchini can help you with that. It can also help with other digestive issues because it contains a high level of electrolytes and fibre. Especially fibre is very important for a healthy digestive system!
Zucchini, likey many other vegetables and fruits, supports a healthy heart and a healthy blood circulation. Again, a high level of fibre in zucchini helps maintain normal blood pressure and can even help lower high blood pressure.
Zucchini is very, very low in calories (it’s basically just fibre and water). That means zucchini is the right food you want to eat during a diet. It keeps you full for a long time and it doesn’t supply you with many calories or fat. Over a longer time, you will find out that you lose weight without much effort. How to prepare zucchini ‘carpaccio’
Zucchini carpaccio is very similar to Beetroot Carpaccio With Raspberry Drizzling. You want to cut your zucchini in very thin slices as the texture and appearance should resemble classic carpaccio. For this purpose, you a very sharp small knife or a mandolin.
When you cut your zucchini in thin slices, arrange them in overlapping (concentric) circles on your plate. Use your creativity and your favourite herbs. I used dill, mint, coriander, and rosemary! If you can’t decide what herbs to use, use this comprehensive herb guide!
Prepare your lemon dressing. You need a lemon, Dijon mustard, olive oil, and garlic paste. Mix all together and your lemon dressing is ready.
Place some sprouts and sun-dried tomatoes in the middle. Sprinkle your carpaccio with black sesame seeds and flaked almonds. Done!
Zucchini ‘Carpaccio’ (raw, vegan, gluten-free)
Ingredients
- 2 large zucchini thinly sliced
- 1 cup sprouts
- 1 cup sun-dried tomatoes
- 1/3 cup flaked almonds
- 1/2 cup fresh herbs dill, coriander, rosemary, mint…
- 2 tbsp black sesame seeds
Lemon dressing:
- 1 large lemon squeezed
- 1 tsp Dijon mustard
- 1 tbsp garlic paste or 2 garlic cloves (minced)
- 1/4 cup olive oil
- salt/pepper
Instructions
- Make your lemon dressing. Mix all the ingredients in a bolw untill Dijon mustard is dissolved completely. Taste and add and salt and/or pepper according to your liking.
- Arrange zucchini slices on 2 large plates in overlapping, concentric circles. Place sprouts and sun-dried tomatoe in the centre. Sprinkle with all your favourite herbs, black sesame seeds, flaked almonds.
- Drizzle the lemon dressing over the carpaccio. Add more salt and/or pepper if you wish.
- Enjoy!
