I have a special passion for cooking the Asian cuisine. There are so many great recipes for Asian-style dishes for vegans. With no doubts, sushi is one of them.
I don’t know why so many people think that vegan sushi must be only a boring plain roll with a small piece of avocado or cucumber. That’s absolutely not true!
Wih a little bit of inspiration, you can create a whole lot more! I usually add not only cucumber and avocados, but also, mango, yellow, red or green capsicum, sweet potato, plain or marinated tofu, tempeh, vegan cream cheese, carrot…
If you wish to make your sushi funny and interesting, add some food colouring! You can use an artificial food colouring (only check if its vegan!) or a natural food colouring.
Over the pat couple of years, there have been questions about an artificial food colouring and its influence on a child behaviour and other, especially hyperactivity-related health issues. However, the scientists found no link between hyperactivity, ADHD, and other health issues in children.

Natural food colouring is fairly easy to make at home from ingredients you usually find in your kitchen. Ingredients like spinach, turmeric, beetroot, sauerkraut or carrot can be all used for a food colouring.
There are other ingredients which you might purchase from special shops. Blue spirulina powder, green spirulina powder, purple acai powder, etc.
Vegan Rainbow Sushi
Ingredients
- 2 cups sushi rice
- 2 1/2 cups water
- 1/2 cup rice vinegar
- food colouring
- 5 nori sheets
- 1 small cucumber cut in thin slices
- 1 sweet potato boiled, peeled and cut in thin slices
- 1 small mango peeled, stone removed and cut in slices
- 1 small avocado peeled, stone removed and cut in slices
- 1 small red capsicum cut in thin slices
- black sesame seeds
- tamari sauce optional
- wasabi paste optional
- pickled ginger optional
Instructions
- In a large saucepan or rice cooker combine sushi rice and water and cook rice for 15-20 minutes. Remove from heat, emove lit and let it rest for 5 minutes.
- Add rice vinegar to cooked rice and mix gently. Spread it out on the baking sheet to cool.
- Separate evenly the rice in 5 or more bowls (depends how many colours you want) and mix it with the food colouring of your choice.
- Place the sushi mat on a flat surface. Put a nori sheet on the top and add rice, one colour each time. Spread the rice evenly on the sheet, leaving about 0,5 cm around the edges. Dip your fingers in war water if needed.
- Add vegetable of your choice and start rolling your sushi roll, pushing gently the vegetableinside the roll.
- Repeat step 4 and 5 with each colour. Sprinkle your rolls with black sesame seeds.
- Eat with tamari sauce, wasabi paste, and pickled ginger. Enjoy!
