Having desserts on a keto diet can be particularly tough, especially if you try to keep your carb intake under some specific number of grams. But these doughnuts are keto-friendly! They are low in carbs, vegan, gluten-free, and sugar-free! These coffee and chocolate doughnuts are so yummy, easy, and so low-carb that you won’t believe they are doughnuts made of cocoa and chocolate!
I love coffee, chocolate, and vegan desserts. How can I combine these three things together if I follow a keto, low-carb diet? I thought it would be impossible to find some sweet snack that will fit in my vegan and keto diet but guess what! After trying a few different recipes, I have found these doughnuts!
I wanted to develop a recipe for doughnuts covered in chocolate that are made of coffee and cocoa. However, everything needs sugar and flour! Then I started to think about using psyllium husk and almond meal as low-carb substitutes for keto vegan baking.
I have to admin I am a total chocolate addict and love anything with dark chocolate. I don’t care whether my dessert is covered in dark chocolate or it contains dark chocolate, it’s MINE!!
The only problem that I have with it is that I want to avoid all the carbs that necessarily have to come with my dessert. That means that every time I’ve got a chance, I search for low-carb vegan options. It’s hard sometimes if you don’t know how to replace high-carb ingredients with those that contain fewer carbs.
So, my conlusion is that if you are keen to try vegan keto desserts, then you definitely give a go to these yummy and easy keto, low-carb vegan coffee and cocoa doughnuts.

For vegan ketpgenic baking, htere are many great low-carb meal swaps out there. Uusally, it’s awesome to use some kind of sweetener (liquid or granulated) that will mae your food sweet and you still aviod using sugar in your cooking/baking.

What do you need to make these keto low-carb coffee and cocoa doughnuts?
- Non-dairy milk. I used unsweetened soy milk.
- Vanilla extract. Try to find and use pure vanilla extract.
- Liquid sweetener. Stevia or erythritol is the most commonly used liquid sweeteners.
- Espresso. Freshly brewed.
- Coconut oil. Make sure you melt it before using.
- Almond meal. Along with coconut flour and almond flour, almond meal is one of the best keto options for vegan baking!
- Raw cocoa powder
- Psyllium husk. If you are not sure what psyllium husk is and what it’s used for, read this article. Just to give you a short hint, psyllium husk has many health benefits. It’s especially good for improving gut health, heart health, and it has a laxative effect.
- Baking powder
- Baking soda
- Sea salt. Finely ground sea salt is perfect!
- Dark non-dairy chocolate. I used 90% cocoa dark chocolate because it’s the best!

Vegan Keto Coffee and Cocoa Doughnuts
Ingredients
- 1/2 cup soy milk or any other non-dairy milk
- 1 tsp vanilla extract
- 2 tbsp liquid sweetener of choice
- 1 brewed espresso
- 1/3 cup coconut oil melted
- 1/2 cup almond meal
- 1/3 cup raw cocoa powder
- 1/4 cup psyllium husk
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp sea salt fine
- 150g dark chocolate (70-90%)1) melted, for coating
Instructions
- Preheat oven to 180°C/340°F.
- In a bowl, combine milk, sweetener, vanilla extract, melted coconut oil, and espresso.
- In the same bowl, add almond meal and stir until no lumps are visible. Add cocoa powder, psyllium husk, baking soda, baking powder, and salt. Stir well to combine everything.
- Lightly grease the doughnut pan with coconut oil and scoop the dough into each doughnut hole. You should have enough dough to make 6 doughnuts.
- Bake for 15-20 minutes. Remove from the oven and let the doughnuts completely cool before removing them from the doughnut pan.
- In a heatproof pan, melt the dark chocolate over a saucepan with hot water, stirring constantly While the chocolate is still hot, dip each doughnut into the melted chocolate. Let the doughnuts sit for additional 10 minutes before consuming.
