Have you ever wondered what beautiful and delicious recipes, let alone desserts you could make with dragon fruit? Here it is, the awesome recipe for vegan dragon fruit tartlets that are also super easy to make!
Jump to RecipePrint RecipeSome time ago, my boyfriend brought home a couple of huge dragon fruits that needed to be eaten soon. I immediately thought that it would be a shame to et them just like them and started to think of ways how to use this gorgeous and exotic fruit!
I used half of one dragon fruit for a pink smoothie and oh man, it was delicious! That I had to find another way how to utilize the rest of my dragon fruit.
We don’t get dragon fruit easily in a supermarket or farmer markets in South Australia (maybe is dragon fruit too exotic for this part of the world?) and if I see it somewhere, it’s wayyyyy too expensive!
So now you understand why I didn’t know what to make with the dragon fruit straight away! I was given the fruit on an extremely hot day (45 degrees Celsius!!) and I was melting! So I thought it would be good to make popsicles.
Then, of course, I was too lazy and impatient to wait a few hours for frozen popsicles. Therefore, I decided to make a raw vegan dessert instead! No-bake vegan dragon fruit tartlets, that’s it!
These dragon fruit tartlets are easy to make and don’t require a lot of ingredients, unlike other vegan desserts. The only thing you have to think of beforehand is to soak your cashews in water for at least 4 hours.
How to prevent these tartlets from being too runny? Use agar-agar powder instead of gelatine and make sure your dragon fruit mixture gets thick enough to create the gorgeous tartlets.
You may be asking “what is agar-agar powder?” To explain it in an easy way, agar-agar powder is the same as gelatine-powder and has the same properties. Unlike gelatine which is delivered from animals, agar-agar is made of a plant and therefore it’s 100% vegan.
One more thing for making these dragon fruit tartlets. If you don’t have any frozen raspberries that can be thawed to create this cute pink colour for a pink layer, you can use a pink food colouring. I recommend using pink pitaya powder!

Vegan Dragon Fruit Tartlets
Equipment
- Muffin Tin
- Food Processor
Ingredients
For Base Layer:
- 10 Medjool dates
- 1 cup nuts hazelnuts, peanuts, cashews, mix nuts…
- 1 cup desiccated coconut
- 1/4 cup coconut oil melted
- 1 tsp vanilla essence
- 1/2 tsp sea salt
- water if needed
For White Layer:
- 2 dragon fruits
- 1 cup cashews soaked in water for 4 hours
- 2 tbsp maple or rice malt syrup
- 1 cup full fat coconut milk
- 1 tsp vanilla essence
- 1 tbsp lemon or lime juice
- 2 tsp agar-agar powder
For Pink Layer:
- 1 tbsp juice from the thawed raspberries can be substituted with 1 tsp pink food colouring, see notes
- 1 tsp agar-agar powder
Instructions
- Add all the ingredients for the base into a food processor and process until the dough holds together and doesn't crumble. Add a little bit of water if the dough doesn't hold together.
- Press the dough into the muffin tin. It should be enough dough for 12 tartlets. Set aside.
- Add all the ingredients except agar-agar powder for the white layer into a food processor and process until smooth.
- Transfer 2/3 of the mixture into a shallow saucepan and stir into agar-agar powder until it completely dissolves. Bring it to a quick boil (about 2 minutes) over medium heat and stir constantly. Take it off the heat and let it cool down. You should see that the mixture starts thickening.
- After the mixture cool down, pour it over the base layer in the muffin tin.
- Add your raspberry juice or a pink food colouring to the rest of the dragon fruit mixture and stir it. Transfer it to a saucepan and stir into agar-agar powder until it dissolves completely. Bring to a quick boil (about 2 minutes) over medium heat and stir constantly. Take it off the heat and let it cool down. The mixture should start thickening.
- After the mixture cools down, pour it over the white layer in the muffin tin.
- Place the muffin tin with dragon fruit tartlets in a fridge for 1 hour.
- Decorate the tartlets with desiccated coconut and cut dragon fruit. Enjoy!
