When I think about Christmas, I always picture the scent of ginger, cinnamon, and cardamon. Spicy gingerbread men are exactly what you need in Christmas to get all these amazing spiced scents, too!
This year is the first time I made VEGAN gingerbread cookies and I was worried about the results. But, in the end, there was absolutely no reason for it! These gingerbread men came out from the oven perfect, soft inside and crispy outside!

If you also like your gingerbread men spicier, add all the spice in the recipe plus 1 tbsp ginger more! If this might be a little bit too spicy, add 1 tbsp all spices more!
This recipe is simple and I was afraid it would take ages but NO! In 10 minutes you have your dough ready and you bake the spicy gingerbread men only for 5 minutes! The only time you have to wait is one hour when you have to let the dough chil in a fridge. Meanwhile you wait, ypou can prepare the very simple icing.
So here we are getting to another step – icing. Make sure your icing is not either too runny or too thick. Mine was a little bit runny but I swear it wasn’t my fault! I live in Australia and in December we get VERY HOT days here. So I had to keep my icing in the freezer al the time I wasn’t using it or it would melt like a candle wax!

Ingredients
For gingerbread men:
- 3 cups rice flour (cornstarch) or any other gluten-free flour
- 1 1/2 tsp ground cinnamon
- 1 tsp cardamon optional
- 1 tbsp ginger powder
- 1 tsp sea salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tbsp vanilla essence
- 1 cup molasses
- 4 tbsp vegan margarine melted
- 1 tbsp almond milk
For the icing:
- 2 cups powdered sugar
- 2 tbsp almond or coconut milk
Instructions
- In a bowl, mix flour, baking soda, baking, powder, salt, and all the spices. For the spicier dough, add 1 tbsp ginger powder more!
- In another bowl, mix molasses, melted margarine, milk, and vanilla essence.
- Place the mixed dry ingredients in the bowl with liquid ingredients and stir it all together until you achieve nice looking dough which sticks together.
- Make a dough ball and wrap it all around in a cling wrap. Let it chill in a fridge for at least one hour but no more than one hour and a half.
- Preheat oven to 200 degrees Celsius.
- When the dough is chilled, take it out from the fridge and knead it with your hands a few time. If it now looks too dry, add a splash of milk to it. Knead again.
- Flour a flat surface and roll the dough out with a rolling pin. Don’t make it thinner than 5 mm or it would be too crispy after baking. Cut out gingerbread men with your cookie cutter.
- Place gingerbread men on a baking paper sheet and bake them in the oven for 5 minutes MAXIMUM.
- Start making your icing. Mix together powdered sugar and milk. Stuff it in a plastic bag and cut off one corner or use a decorating tube. Decorate your gingerbread men and let them chill.
- Enjoy with a glass of milk!
