Raise your hand if you love desserts with a tropical flavour! I do and that’s why I made these absolutely gorgeous raw vegan mango and pineapple slices! I wanted to add fresh coconut flesh but I difn’t have any coconut! So I created amazing yellow colour and I love it!

But if you don’t know it, I am currently in Australia and we are experiencing really hot days at the moment. Plus, you can save this recipe for later (for summer or when you see pineapple and mango on sale) or you can buy frozen fruits! It will work just fine in this recipe, too!
As you might already suspect this recipe is freeze-friendly. You can store these tropical slices in your freezer for up to one month.
If you wish to make your bars really beautiful, use bar moulds. If you don’t have them, just use a classic non-stick (silicone) bakeware.
I wanted to brighten my feed because it’s filled with mostly pink or purple recipes for desserts. Those desserts are beautiful but I think having a little change sometimes doesn’t hurt anyone 🙂 How do you like this bright yellow
The crust is super easy. You only need dates, raw walnuts, almond meal, and sea salt. That’s it! Pretty easy, eh? If you don’t have dates, use
For the mango layer, you only need to blend mangos, pineapple, and if you wish, some maple syrup. The trick here is agar-agar powder which makes sure that the mixture is not too runny.
EDIT: If you wish to have these slices 100% raw, don’t use agar-agar powder. Blend mangos and pineapple, add maple syrup if you want, pour it over the base and freeze it.

Ingredients
For the crust:
- 1 cup almond meal
- 1/2 cup raw walnuts
- 1 cup dates pitted
- 1/4 tsp sea salt
- water if needed
For the yellow layer:
- 1 small pineapple cut in chunks
- 2 small mangos peeled, stone removed
- 2 tsp agar-agar powder
- 1 tbsp maple syrup optional
For garnish:
- fresh mint leaves
- sugar stars
- coconut flakes
Instructions
- Start with making crust: Add all the ingredients to a food processor and process until a sticky but still crunchy paste is formed. If the dough is too dry and doesn’t stick together add a little bit of water.
- Press the dough in bar moulds or any other rectangular bakeware. Set is aside i a freezer or fridge while making the yellow mango layer.
- To make the yellow mango layer, add mango and pineapple to a food processor and processor until very smooth.
- Mix agar-agar powder with 1 tbsp of mango mix until agar-agar is fully dissolved. Transfer it into a small saucepan and bring it to boil. Boil it for 1 minute, stirring constantly. Turn off the heat and let it cool down a little bit.
- Add agar-agar mix to the mango mix and combine together. Don’t blend it!
- Pour the mango layer over the crust and place it in a freezer for at least 1 hour.
- Decorate with fresh mint leaves, coconut flakes, and sugar stars. Enjoy!
