My dear vegan friends, we have been through half Veganuary and now Valentine’s day is almost here! This love celebration is a great opportunity to shine with some absolutely amazing vegan, gluten-free dessert. What about raw caramel mini tarts??

These caramel tarts are vegan, raw, and gluten-free. They are also free from refined sugar and they are not terribly sweet like some other tarts out there!
You don’t have to worried about burning them. I seriously love raw desserts. Raw tarts, raw doughnuts, raw pies, and raw tarts. This is also probably soemthing you will find the msot on my blog. At least recently. I absolutely fell in love with raw sweet treats!

These caramel tarts contain nuts. Therefore, they are not suitable for people with nut allergies. If you still wish to make these tarts use dates instead of nuts. Tarts will look differently, however, the taste will be sweeter. I recommend not to use any maple syrup, sugar or sweetener. You will be good just with a lot of dates!
If you use nuts, make sure you use their raw version. I used raw walnuts,
Caramel Mini Tarts
Ingredients
For mini tarts:
- 1/2 cup almond meal
- 1 cup raw walnuts
- 2 tbsp black sesame seeds
- 2 tbsp white sesame seeds
- 1/4 cup dessicated coconut
- 1 tbsp vanilla extract
- 5 dates pitted
- 1 tbsp raw cocoa powder
- 2 tbsp coconut oil melted
- 1/4 tsp sea salt
For caramel frosting:
- 1 can full fat coconut cream only thick part
- 3 dates pitted
- 1 tsp raw cacao powder
- 1 tsp vanilla extract
- 1 tbsp maple syrup optional
For garnish:
- pomegranate seeds
- berries
Instructions
- Place all the ingredients for the tarts in a high-speed food processor. Pulse it a few times until a very sticky dough is formed.
- Press the dough into a tart or muffin pan. Place it in a fridge while making the frosting.
- Make the frosting by adding all the ingredients into a food processor. Process until creamy but the solid frosting is formed.
- Apply the frosting on the top of each tart. Put the tarts back in the fridge.
- Decorate with berries and pomegranate seeds.
- Enjoy!
