Raw salads are great! They are healthy, crunchy, easy to make, and packed with nutrients we all need! Cabbage and zucchini salad is an awesome choice for healthy and light lunch or as a side dish for a dinner plate. Get that crunch!
As we experience a very hot summer here in down under right now, I thought making raw salad would be the best idea ever. And yes, it is very much refreshing, especially if you like raw vegetables.
If you live in the northern hemisphere and think it might be too cold for a raw salad at the moment, I will cheer you up. You can still eat this salad as a side dish for your dinner!
It goes perfectly well together with baked potatoes and other baked or roasted vegetables. It’s delicious with fried tofu, too!
If I wanted to be honest with you, I’d have to say that I don’t eat salads too often. I know, I should feel guilty. Well… I really don’t. I eat tons of vegetables mostly cooked). So… I think I still do very well for my body. Eating more raw salads is one of the new year’s resolutions. I might even get involved in a raw vegan challenge. Who knows?

White cabbage (and also red cabbage) fits perfectly for salads. It gives them a very light and crunchy taste and it keeps you hydrated. Try my Festive Salad With Chickpeas And Oranges!
Why should you eat cabbage??? Because cabbage is:
- low in calories
- packed with fibre
- fat-free
- a good source of vitamin C and K
- a source of folate and potassium
- promoting a healthy weight loss
- easy to store
- easy to prepared
- crispy!
How to prepare this salad? It’s actually super easy. Your ingredients will be only white or green cabbage, zucchini (don’t forget to spiralize them, you can use this spiralizer), maple syrup, dill (fresh or dried, fresh is better), water, white wine vinegar, and a few mint leaves!
Raw Cabbage And Zucchini Salad
Equipment
- Spiralizer
Ingredients
For salad:
- 1/2 large head of white or green cabbage shredded
- 1 large zucchini spiralized
- 1/4 cup fresh or dried dill
- handful fresh mint leaves
For dressing:
- 1/2 cup water
- 1/4 cup white wine (rice) vinegar
- 1 tbsp maple syrup
- salt, pepper to taste
Instructions
- Shred your cabbage and spiralize your zucchini. Transfer them in a large bowl.
- Add dill and mint leaves to the bowl and mix all together well.
- Prepare your dressing: Mix all the ingredients together in another bowl. Add salt and pepper according to your tasting. Add also more maple syrup for a sweeter taste or more white wine vinegar for sourer taste.
- Pour the dressing over the vegetables and mix well.
- Serve immediately.
