I can’t tell how much I love raw things! One of my most favourite raw vegan things are definitely doughnuts! They are easier to make since they don’t have to be baked and they can’t be burnt (because I have burnt a few doughnuts before!).
When blueberries are in season, like right now in Australia, I always buy them a try to incorporate them in my vegan desserts or breakfast. Sometimes I just eat them as my snack because in the case you don’t know, blueberries are full of antioxidants and vitamin C! They make your skin and hair glow!

These doughnuts are not only a delicious snack or dessert but they are amazing after workout or exercise. They are packed with protein thanks to pea protein powder. I used organic plant-based protein from Orgain which is sooo delicious! I really recommend you to try it too!
For this recipe, you need raw and unsalted cashews. To make blueberry glaze, you will have to soak them preferably overnight or boil them for at least 20 minutes. This way they will be easier to blend.
To decorate your doughnuts, use what you have at home and goes together with blueberries! I used dairy-free chocolate chips, fresh blueberries, shredded coconut, and sugar stars.

Raw Blueberry Doughnuts
Ingredients
For doughnuts:
- 1 cup raw unsalted cashews
- 1 tsp vanilla extract
- 2 heaped scoopes vanilla pea protein
- 2 tbsp dried goji berries
- 1 cup almond meal
- water
For blueberry glaze:
- 3/4 cup cashews soaked overnight or boiled for 20 minutes
- 1/2 cup blueberries fresh or frozen
- 1 tbsp lemon juice
- 1/3 canned coconut milk
For toppings:
- fresh blueberries
- shredded coconut
- dairy-free chcocolate chips
- sugar stars
Instructions
- Add all the ingredients for doughnuts to a food processor and process on high speed until dough crumbles. Add a little bit of water to make the dough sticky. It should hold together easily.
- Press the dough in doughnut moulds and place it in a fridge while making the blueberry glaze.
- Add all the ingredients for the blueberry glaze to a food processor and blend until completely smooth.
- Pour the glaze in a shallow dish and dip the doughnuts in it.
- Decorate the doughnuts with your favourite toppings, for example, dairy-free chocolate chips, fresh blueberries, shredded coconut, and sugar stars.
- Enjoy!
