For filling, I almost always use cashews. They have such a great consistency for making cream and creamy fillings! Just think ahead and soak them overnight or boil them for at least 20 minutes!
Because I added dates to make the crust, you don’t have to add sugar or maple syrup. Dates are very sweet
If you live somewhere where berries are expensive or hard to get, you can buy them frozen in bulk. This way berries are usually cheaper and last longer!
Raw Berry Slices
Ingredients
For the crust:
- 1/2 cup dates pitted
- 1/2 cup raw almonds
- 1/4 tsp sea salt
- 1/4 cup dried cranberries
- water
For the blueberry layer:
- 1/2 cup cashews soaked for 4 hours or boiled for 20 minutes
- 1/2 cup blueberries frozen or fresh
- 2 tbsp maple syrup
- 1 tsp vanilla extract
For the raspberry layer:
- 1/2 cup cashews soaked for 4 hours or boiled for 20 minutes
- 1/2 cup raspberries frozen or fresh
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tbsp lemon juice
To decorate:
- 50g dairy-free dark chocolate melted
- blueberries
- raspberries
Instructions
- Make a crust first. Add all the ingredients to a blender and blend until sticky dough is formed. Press it in a cake tray and set it aside.
- Make the blueberry layer: add all the ingredients to a blender and blend until smooth. Pour over the crust and set it aside.
- Make the raspberry layer: add all the ingredients to a blender and blend until smooth. Pour over the blueberry layer and place it in a freezer for 1 hour to firm up.
- After 1 hour, melt chocolate in a waterproof bowl over the bowl with boiling water. Drizzle it on the top of the slices and let it cool down.
- Enjoy!
