Speaking the truth, it was my boyfriend who made these delicious easy pickled cucumbers. He found the most delicious and super cheap Lebanese and qukes and brought back home a good few kilos of these tiny little cucumbers. Then He came up with some exciting recipes and ideas how to prepare the cucumbers. And we love pickled foods, so why not to make pickled cucumbers?

What do you need?
I used little qukes cucumbers that are basically little baby Lebanese cucumbers. They are crispy, crunchy, juicy, and full of flavour. Because they are this small they have a perfect snacking size. If you find yourself having some nighttime cravings, grab some qukes cucumbers and help yourself!
Lebanese cucumbers are suitable for this recipe as well. They are amazing for pickling because they don’t have any annoying seeds or they are almost seedless. They are mild, with a bumpy and ridged skin.
Choose whichever cucucumber is available in your store, the both types are nice and suitable for picking.
You need classic white (cane) sugar, water, kosher salt or pink Himalayan salt, and white vinegar. Instead of white vinegar, you can use apple cider vinegar. Easy, eh??
To slice these cucumbers nicely and thinly, it’s recommended to use a mandoline slicer. If you don’t have one, replace it with a very sharp, chef knife. Be very careful when slicing the cucumbers and watch out not to hurt yourself!
If you don’t want to slice the cucumbers, pickle them as a whole. I only found out that when sliced they fit better in a jar and they are of a better use. But the choice is yours!

Quick Pickled Cucumbers
Equipment
- Mandoline slicer or a very sharp chef knife
- Clean jars (about 300-400 ml each)
Ingredients
- 250 g qukes or Lebanese cucumbers thinly sliced, with the skin on
- 1/2 cup distilled water
- 1/2 cup white or apple cider vinegar
- 2 tbsp white granulated sugar
- 2 tsp kosher or pink Himalayan salt
Instructions
- In a small bowl, mix together water, vinegar, sugar, and salt. Stir until all sugar and salt are entirely dissolved. This is your brine.
- Place the sliced cucumbers in a jar and with the back of a fork press them to the bottom of the jar. Pour the brine over the cucumbers in the jar. Make sure the cucumbers are fully covered with brine.
- Let it sin for at least 30 minutes before eating.
- Serve in, on salads, sandwiches, toasts, on tacos, nachos, tortillas, wraps…
