Are you looking for a perfect summer drink but want to try something different than your usual? Then I would encourage you to try this very refreshing pineapple mojito! It’s very simple and you won’t regret this fresh taste of pineapple, mint, and white rum. You can also make a non-alcoholic version.
Mojito has always been one of my favourite cocktails. I mostly drink it in summer when I really appreciate its fresh minty and sparkling taste. There are of course different varieties of mojito. Usually, if you ask for mojito you get a classic drink with white rum, raw sugar, lime, and mint leaves. It’s sp easy!
I would also say it’s so easy to get addicted to these yummy cocktails! On hot summer days, I often make a big jar of non-alcoholic mojito and sip it during the day. It’s so good and it really cools me down.
This time I decided to take a slightly different path than I would normally. I found cheap pineapples – two pineapples for a price of one – in a fruit and veggie shop nearby us. We recently moved to our newhouse and I had no ideaabout this shop. But now I do and I have to go there again very soon!

What do you need to make pineapple mojito?
- Pineapple chunks. The best is to use fresh pineapple but in a case of emergency, canned pineapple chunks will do you a favour too.
- Lime, cut in wedges. If you don’t have a fresh lime, use lime juice.
- Mint leaves. Read this herb guide for more information about mint and other herbs for vegan cooking.
- White rum. Bacardi or Malibu are my favourites.
- Club soda
- Simple syrup. Pure cane simple syrup is what you need but if you can’t get liquid simple syrup, just use granulated raw (cane) sugar.
- Crushed ice
- Pineapple juice if you are making virgin (non-alcoholic) pineapple mojito.

Pineapple Mojito
Equipment
- Muddler
- Tall (highball) glasses
Ingredients
- 1/2 pineapple cut in chunks, skin removed
- 1 lime cut in wedges
- 1 small bunch of mint leaves
- 60 ml white rum
- 1 cup club soda
- 1/2 cup simple syrup1)
- crushed ice
Non-alcoholic 'virgin' pineapple mojito
- 1/2 cup pineapple chunks
- 1 lime cut in wedges
- 1 small bunch of mint leaves
- 1/2 cup pineapple juice
- 1/2 cup simple syrup
- 1 cup club soda
- crushed ice
Instructions
- Place the pineapple chunks, lime wedges, and mint leaves in two tall (highball) glasses. Reserve a few lime wedges and mint leaves for a garnish.
- Gently muddle everything with a muddler but don't break the mint leaves.
- Pour simple syrup and white rum or pineapple juice in glasses. Add crushed ice and top up with club soda.
- Garnish with cut lime, pineapple chunks, and mint leaves. Serve immediately.
