These peanut butter and banana bars don’t require any baking and they mix the incredible taste of peanut butter and ripe bananas. They work as a great snack or delicious breakfast, prepared the night before.

However, if you don’t want to freeze them and make a different type of snack or breakfast, you have to try these healthy no-bake bars!
How often do you use bananas in your kitchen? Or do you usually snack them between meals? I found out that snacking a banana leaves me full for longer. That’s because bananas contain fibre that is very important for healthy digestion.
Apart from fibre, bananas are also fairly rich in potassium, vitamin B6, vitamin C, magnesium, and manganese. That’s quite a good cocktail for snacking bananas, don’t you think so?
I found out that anything with peanut butter tastes so good and I never make a mistake to use heaps of peanut butter in my kitchen. Peanut butter works as a calorie-dense food and perhaps gives you the missing calories.
Peanut butter contains mostly unsaturated fat and therefore it’s a good source for ‘healthy fats’ in a vegan or vegetarian diet. Therefore, peanut butter can still fit in a weight-loss plan.
In a market, there are usually two types of peanut butter: smooth peanut butter which is creamy or crunchy peanut butter which is chunky and thick.
For this recipe, I used smooth peanut butter because it creates a better texture for the bars (in my opinion). If you prefer crunchy peanut butter the go for it. I usually put crunchy peanut butter on a slice of bread. That’s the way how I enjoy the crunch more!
Optionally, cover your peanut butter and banana bars with melted dark chocolate that pair so well with peanut butter and with banana, too!
Don’t forget to use gluten-free rolled oats if you want to keep this recipe gluten-free.

No-bake Peanut Butter And Banana Bars
Equipment
- Food Processor
Ingredients
- 2 cups gluten-free rolled oats
- 2 ripe bananas
- 3 tbsp smooth peanut butter
- 1 tbsp chia seeds
- 1 tbsp maple syrup
- 2 tbsp coconut oil melted
- 1 tsp vanilla extract
- 1/4 cup shredded coconut
- 1 cup roasted peanuts
Toppings:
- 1/2 bar dark chocolate melted
- roasted peanuts chopped
Instructions
- Place all the ingredients except roasted peanuts into a food processor. Process for 1 minute.
- Add roasted peanuts and process at the lowest speed for 30 seconds.
- Press the mixture into your tin and leave it in a freezer for at least 2 hours to firm up.
- Once the bars are firm, remove them carefully from the tin. Heat dark chocolate in a heatproof bowl over the saucepan with boiling water. Cover the bars with melted chocolate according to your liking. Sprinkle the bars with roasted chopped peanuts.
