In cold days, we probably look for a pot of some hot and delicious stew to warm us up from inside. Thanks God stews are so easy to make! This stew contains sweet purple potatoes and a mix of 5 different beans. So yummy!

Buying a can with mix beans is so much easier than buying 5 cans with 5 different beans and then mix them together. Another alternative is to use 1 can black beans or 1 can pinto beans (in case you don’t want mix bean). Chickpeas is also a great option as it’s a part of a bean mix.

This mix bean and sweet potat soup is very easy. It can be all done in one pot and only a few ingredients are required. If you don’t have purple sweet potato, add pink sweet potato or even a regular potato would work in this recipe.
I assure you that you are going to love this mix and sweer potato stew because it’s so easy! And who wants to do more work right?
This is a huge pot of stew so make sure that you have someone to share it with. You can make roughly 6 servings!
For this recipe you don’t have to peel potatoes. I like their skin but maybe you don’t. Everyone is different.

Mix Bean And Sweet Potato Stew
Ingredients
- 2 large sweet purple potatoes cut in cubes
- 1 medium red onion peeled and chopped
- 4 cloves garlic peeled and chopped
- 2 tbsp olive oil
- 1/4 cup frozen corn kernels
- 1 cup mushrooms sliced
- 2 large tomatoes pureéd
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp sweet paprika
- 1 tsp smoked paprika
- 1 tsp red chilli flakes
- 2 cup vegetable stock
- 1 can diced tomatoes
- 1 can 5 beans mix drained and rinsed
- 1 cup spinach leaves chopped
- salt and pepper to taste
Instructions
- Cut potatoes in small cubes. Chop onion, garlic cloves, and slice mushrooms.
- Heat olive oil in a large saucepan and add onion and garlic cloves. Sauteé for 2 minutes, then add all the spices. Sauteé for another 1 minute.
- In a food processor, pureé tomatoes and add them to the sauce pan. Also add potatoes, diced tomatoes, and vegetable stock. Cook everything over a medium heat for 10-15 minutes or until potatoes are quite tender. Then lower the heat to a minimum.
- Add mushrooms, beans, and spinach. Increase heat to medium again and cook everything for 3 minutes. Add salt and pepper if needed. Serve with freshly chopped parsley.
