As a vegan, you can still enjoy delicious and healthy ice cream. And surely, it doesn’t have to include cow’s milk at all! These mango popsicles are very easy, ready relatively quickly, and they are very refreshing. That’s great, especially in the hot summer!
As a child, I loved all different kinds of ice cream. I remember every time I had a chance I would ask my parents to buy me a scoop or two or thick fresh ice cream. It was so cheap back then, hehe!
My favourite was Smurf (Blue Moon) ice cream. It was blue like the ocean and probably full of some nasty colourings. I didn’t mind, why would I? When you are a child, you just eat ANY ice cream, right?!
As far as I remember, this Smurf blue ice cream tasted like marshmallows which I used to love. It was also quite sweet so my parents didn’t allow me to get ice cream often.
Since I have become vegan, I don’t eat ice cream often. I treat myself occasionally with vegan Magnum (I prefer almond one) or some other mostly fruity popsicles.
There are not many non-dairy ice cream and popsicle brands out there. But, times are changing and some brands with quite old non-vegan history start investing in non-dairy products. Great vegan times are coming, my friends!
To revoke my childhood memories for the blue ice cream, I did a little experience and decided to make my own vegan version of this blue ice cream. Plus, combined with mango ice cream. The result is the most delicious and also healthy mango and blue spirulina popsicles!
After I created my Strawberry And Raspberry Popsicles which were a huge success, I wanted to make another yummy and healthy popsicles for this hot summer.
At the end of the day, blue and yellow are colours that look very well together. And, I made sure these mango and spirulina popsicles will also taste incredibly good!!
So now you are probably asking how you create this beautiful blue colour. If you prefer a natural way, then definitely go for blue spirulina powder! It’s natural and healthy, super-powerful powder!
I use blue spirulina powder from time to time. If you have some at home already, make sure you try Black Vegan Pancakes With Blue Spirulina Sauce or Vegan Rainbow Sushi!
Mango And Blue Spirulina Popsicles
Equipment
- Blender
- Popsicle moulds
Ingredients
- 2 medium ripe mangoes flesh
- 2 cups raw coconut yoghurt 1)
- 1 tbsp maple syrup
- 1 tbsp lemon juice
- 2 tsp blue spirulina powder
Instructions
- In a blender, add mango flesh and blend until smooth.
- Transfer half of the mango into popsicle moulds and set in a freezer. Set the other half of mango aside.
- Rinse the blender and add all the remaining ingredients. Blend until well combined.
- Pour the blue spirulina yoghurt into popsicle moulds. Top with the remaining mango mixture.
- Return the popsicles back to the freezer and freeze for at least 1 hour.
