Cooking with teriyaki sauce is always something very interesting for me. When I was a child, my family almost never cooked Japanese dishes as we could never get Japanese ingredients in a small town!
Since then, a lot of has changed. I moved to a a big city in another country where nearly every ingredient is avaibale in supermarkets or small Asian shops. It’s great to know that you are able to cook basically you wan. Plus, being vegan is not an issue anymore because many of the traditional non-vegan Asian dishes can be easily veganized!
What is teriyaki?
Simply said, the teriyaki is a way how to prepare particular, mostly Japanese dishes. We call “teriyaki” every dish that is cooked, marinated, or prepared with the teriyaki sauce.
Teriyaki dishes are often easy to recognize as they are dark, shiny, with a n lovely luster, and covered with thick, sticky teriyaki sauce. They taste great, too! The taste may be described as sweet, and sour, and sticky!
You usually buy a teriyaki sauce premade in a little glass or plastic jar. If you can’t find it anywhere, it’s fairly simple to make your own. You will probably need only soy sauce (tamari sauce if required gluten-free), mirin, and sugar (I like brown sugar). You can also use coconut sugar.
Japanese teriyaki sauce tastes delicious in marinated tofu dishes, vegetable stir-fries, in sushi, glazed eggplant and other Asian dishes! I personally love to marinate all different vegetables and tofu!
King Oyster Mushrooms
King oyster mushrooms are less known but super yummy mushrooms that are mostly used in the Asian cuisine. You always find Japanese dishes using king oyster mushrooms. So does Chiniese cuisine loves to incorporate king oyster mushrooms.
King oyster mushrooms are fairly firm and usually don’t lose their beautiful shape after cooking. They are larher than classic white botton mushrooms. They may have about 15 cm in lenght!
It’s easy to find these mushrooms in local markets. One disadvantage is a higher price. They usually come with roots cut off but if you get king oyster mushrooms with roots, it’s easy to cut them off. These mushrooms are firm but soft to cut through.
Regarding their taste an texture, king oyster mushrooms have meat-like texture, especially after frying and simmering. Therefore, king oyster mushrooms are a popular and awesome substitute for meat. They can be added to usually meat recipes and because of their slightly slim texture, they can be used at the same way as meat!
King oyster mushrooms taste amazing with spring onion (scallion), sesame seeds, sweet and sour sauce, and marinated!

King Oyster Mushrooms With Teriyaki Sauce
Ingredients
- 600g king oyster mushrooms roots cut off, sliced in thick slices
- 3 tbsp tamari or soy sauce
- 1 tbsp mirin
- 1 tbsp Japanese sake
- 1 tbsp brown or coconut sugar
- 2 tbsp neutral oil
- Bunch (5 stalks) spring onion (scallion) green part only, chopped roughly
To serve with:
- 1 cup white rice steamed
- 1 tbsp white sesame seeds
- spring onion green part only, chopped
Instructions
- Add king oyster mushroom slices and close the container with a lid. Give it a shake and make sure that all mushroom slices are entirely covered with the marinade. Let it sit for 15 minutes.
- Meanwhile, heat up 1 tbsp oil in a frying pan and add your spring onion. Fry it for about 5 minutes, then remove from heat. Set it aside.
- Add another 1 tbsp oil in a frying pan and add the marinated mushrooms. Reserve all the extra marinade. You might have to add the mushrooms in small batches if your frying pan is not big enough. Fry from each side until the mushrooms have a nice golden colour.
- Continue the step 4 until all the mushroom slices are fried.
- Place all the mushrooms in the pan and pour over any remaining marinade. Add the fried spring onion. Stir everything and cook for 10 minutes. You might use a bigger pan if you have one.
- Divide the steamed rice into 2 bowls. Add cooked marinated king oyster mushrooms with fried spring onion on the top of the rice. Sprinkle with sesame seeds and chopped fresh spring onion.
