Easy, lightly spicy and extremely delicious vegan tacos that are filled with pulled “pork” king oyster mushrooms. This is a great way how to substitute meat for tacos while still enjoy the “meaty” and juicy taste. Using crunchy corn taco shells these vegan king oyster mushrooms become gluten-free.
Mexican cuisine literally screeaming: “Common, veganize all my recipes!” Why? Because mexican dishes that use meat can be easily made vegan. That is great for us, always hungry vegans! Us vegan who look for meaty substitute without meat and who also want a little bit of spiceness in their lives.
As you know, I have already developed the recipe for yummy and easy Vegan Jackfruit Tacos. Among vegan meat substitutes, jackfruit and king oyster mushrooms are my favourite because their texture, look, and colour resemble meat so much. This is what I recommend for those who just strat a vegan diet and still miss meat.
What do you need to make these king oyster mushroom tacos?
- King oyster mushrooms. What exactly king oyster mushrooms are and how to cook with them you can read in this article. This vegan mushroom guide gives you all the information you need about all essential types of mushrooms you can’t miss in vegan cooking.
- Olive oil. Cold-pressed and extra virgin.
- White onion
- Garlic powder. Can be substituted with garlic paste.
- Ground cumin
- Ground coriander
- Cayenne pepper. I like to make my taco king oyster mushroom meat a little bit spicy but if you don’t feel like spicy tacos, you can omit cayenne pepper altogether. Cayenne pepper or ground chilli is highly recommended for this recipe though.
- Oranges. Try to pick large, ripe, and juicy oranges. You want to get as much fresh juice of them as possible.
- Worcestershire sauce
- Tamari sauce to keep this recipe gluten-free or dark soy sauce. I love Kikkoman brand for soy sauce.
- Maple syrup
- Corn hard taco shells. I love Old El Paso brand because they offer gluten-free taco shells!
- Ripe avocado
- Green chilli pepper
- Fresh coriander leaves
- Lime

King Oyster Mushroom Tacos (Easy, Vegan, Gluten-free)
Ingredients
- 1 kg king oyster mushrooms about 8 medium size mushrooms
- 2 tbsp olive oil
- 1 medium white onion diced
- 1 tsp garlic powder
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/4 tsp cayenne pepper
- 3 large oranges squeezed (about 1/2 cup)
- 2 tsp Worcestershire sauce
- 2 tbsp tamari or soy sauce
- 2 tbsp maple syrup
- salt and pepper to taste
To assemble
- 8 gluten-free corn taco shells
- 1 avocado diced
- 1 green chilli pepper sliced
- fresh coriander leaves
- lime cut in wedges
Instructions
- Cut the roots with a dirt off the mushrooms. Shred each mushrooms with a fork so they resemble pulled pork.
- Heat olive oil in a large frying pan and add the diced onion. SauteƩ for 2 minutes. Then add shredded mushrooms and all the spices. Mix well and fry for about 5 minutes.
- In the same frying pan, add orange juice of 3 squeezed oranges, Worcestershire sauce, tamari or soy sauce, and maple syrup. On medium heat, simmer for 15 minutes until all liquid evaporates.
- Taste the cooked pulled king oyster mushrooms and add salt and/or pepper according to your liking.
- Assemble your tacos: Spoon a little bit of the mushroom meat into each taco shell. Top with diced avocado, coriander leaves and lime wedges. Serve immediately.
