I love chia pudding. It’s so easy to make and also it’s so delicious. I always wonder how something simple like this, made of literally only three or even only two ingredients can taste this amazing. How fabulous is that? And do you know how amazing is to make GREEN chia pudding with some raspberries and delicious slightly sour cashew cream?
By making this chia pudding green, I added 1 teaspoon green spirulina powder. This powder is very strong for colouring. If you prefer chemical food colouring, it’s also possible. Yep, you hear it right. We are going to make delicious and healthy green chia pudding! Plus, I know you always have some frozen leftover raspberries in your freezer. But the way, raspberries are a gorgeous combination with slightly sour cream made of cashews.
Chia seeds (black or white) are an important source of protein and omega-3 fatty acids. This is essential for a good cardiovascular health, healthy brain and nervous system and soft skin. If you don’t know, omega-3 fatty acids have anti-inflammatory properties.
Moreover, chia seeds contain dietary fibre which helps you feel more satisfied after eating your meal (especially breakfast so you don’t get hungry soon after). They also supply you with many important vitamins and minerals, such as iron, phosphorus, magnesium, potassium, zinc, calcium etc.). This all makes them ‘superfood‘.
If you leave chia seeds in a liquid for a certain amount of time, they can get bigger (sometimes up to 12 times more!). This makes them perfect for smoothies, pudding, smoothie bowls, overnight jars etc. Another way how to use them is to add them in salads, risotto, couscous etc.
Eating raspberries are also great for you! They contain antioxidants such as Vitamin C, quercetin, and gallic acid. These are well known for fighting cancer, heart, and circulatory disease as well as age-related decline. They are high in ellagic acid, a known chemopreventative, and have anti-inflammatory properties.

For this chia pudding with raspberries, I am using homemade cashew sour cream. I am saying this cream is SLIGHTLY sour but you can adjust the taste for your liking. You can make it sweeter by adding maple syrup or you can make it more sour by adding lemon juice and a little bit of salt. It’s up to you!

Green Chia Pudding With Raspberries and Cashew Cream Recipe
Preparation time: 20 minutes
Cooking time: no cooking
Serving: 2
Ingredients:
For chia pudding:
1 1/2 cup coconut milk
5 tbsp black chia seeds
1 tsp vanilla extract (optional)
1 tsp green spirulina powder
For cashew cream:
1 cup raw unsalted cashews
1/2 cup cold water
1/4 tsp sea salt
1 tbsp maple syrup (for sweet cashew cream)
1 tbsp lemon juice (for sour cashew cream)
To serve:
6 tbsp Flaxseed and dried figs granola
1/2 cup frozen raspberries
Instructions:
- First, prepare chia pudding. Mix chia seeds and coconut milk, and vanilla extract and set it aside for at least 30 minutes (the best is overnight). Stir the mix occasionally. When it’s ready (it will look like gel) stir into green spirulina powder.
- Prepare cashew cream: boil cashews in water for at least 15 minutes. Try and see if they are tender enough to blend. The better is to soak cashews overnight or at least for 4 hours in warm water.
- Place cashews in a food processor. Add water and blend until completely smooth. Add sea salt and maple syrup/lemon juice (according to your tasting).
- Start making jars. For the bottom layer add green chia pudding. For another layer add 3 tbsp Flaxseed and dried figs granola in each jar. Add cashew cream and top with a few frozen raspberries. Serve immediately.
