Did you ever wonder what salad would be great for a festive season? This salad with chickpeas and orange will impress anyone at the festive table! It can be eaten as a side dish, main or appetizer!
Jump to RecipePrint RecipeI always think about what else I can add to my festive table to make a nice side dish that everyone will love. I usually miss a delicious salad that pairs well with other holiday meals and it’s just full of flavour.
Then I made this raw vegan salad with chickpeas and orange and it was absolutely amazing! I added dried cranberries because they go so well with oranges and they made a very good sweet taste.
For protein, I added a can of chickpeas because chickpeas is a wonderful source of protein, Due to its smooth taste, you can easily mix it in salads!
I also love making this salad for a healthy lunch when I stay at home and need some energy from raw vegan sources. This salad is definitely packed with vitamins and fibre.
If you watch your calorie intake, this salad is very low in calories but gives you a ton of energy! That’s because leafy green vegetables contain a lot of iron, calcium, magnesium, and potassium!

Festive Salad With Chickpea And Oranges
Ingredients
For salad:
- 1 orange cut in small pieces
- 2 cups leafy greens salad mix (kale, spinach, arugula, swiss chard…)
- 1 cup carrots julienned
- 1 cup white cabbage shredded
- 1 cup red cabbage shredded
- 1 can chickpeas rinsed and drained
- 1/4 cup dried cranberries
For Dressing:
- orange juice from 1/2 orange
- 2 tbsp white wine vinegar
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp maple syrup
- 1 tbsp chia seeds
- 1/4 tsp sea salt
To serve:
- chia seeds
- a few walnuts chopped
Instructions
- In a large bowl, mix all the ingredients for your salad.
- In a separated bowl, mix all the ingredients for the dressing.
- Pour the dressing over the salad and gently mix together.
- Divide the salad between plates or bowls and sprinkle with chopped walnuts and more chia seeds.
- Enjoy!
