I love pasta. I can eat it for any of my courses. What about starting a week with an easy and delicious pasta with avocado pesto? I think this is a great way how to eat quick and tasty dinner plus to give your body some nutritions that it needs!
Making pesto is a golden rule almost every time I make pasta at home. Pesto is an amazing sauce for pasta! I usually make coriander pesto with cashews or basil pesto with pine nuts. This time I decided to make avocado pesto with basil and walnuts.

This pesto pasta is suitable for gluten-free people as well. Just make sure you use gluten-free pasta. I usually use my
They make the best gluten-free spaghetti you can ever imagine! They are not sticky, they don’t overcook easily, and they don’t taste odd (like some gluten-free pasta does).
Ingredients
- 2 very ripe avocados peeled, stone removed
- 1/2 cup walnuts
- 1/2 cup extra virgin olive oil
- 1 cup basil leaves
- 3 cloves garlic peeled
- 2 tbsp lemon juice
- salt and pepper to taste
- 1 tbsp nutritional yeast optional
- 1 pack gluten-free spaghetti
- basil leaves to serve
- dairy-free parmesan to serve
Instructions
- In a saucepan bring water to boil. Add gluten-free pasta and cook according to instructions, usually around 10 minutes. Pasta should be al dente. Drain and add a little bit of olive oil so the pasta doesn’t stick together.
- In a food processor, add all the ingredients for pesto. Taste and add salt and/or pepper according to your taste.
- Mix pasta with your avocado pesto. Serve with fresh basil leaves and dairy-free parmesan cheese.
- Enjoy!
