Ah, Christmas season is here? Are you excited? You should be because it’s a perfect time to bake some vegan Christmas cookies! What about healthy, crispy, almond Christmas stars? These Christmas cookies use almond meal instead of flour and they are gluten-free!
Vegan Cocoa Doughnuts With Chocolate And Colourful Drizzle
So I tried to make these Christmas stars with almond meal. I love how my kitchen smelled while baking these little almond cuties. I baked these almond cookies nearly three weeks before Christmas and I was already in a real Christmas mood because of this amazing almond scent in my kitchen!
Another thing was using flaxseed meal instead of egg to make these almond cookies vegan. I usually make flax egg when I bake to replace an egg in cooking. It works very well. If you haven’t tried it yet, do it! Flaxseed is amazing and you will feel great because you don’t hurt any animals for your cookies!
If you don’t know it, there are more reasons why to eat flaxseeds. They improve your skin, hair, and nails. They can help heal acne. Flaxseeds are high in antioxidants, phytochemicals and they are known for their antiinflammatory properties!
I added only 1/4 cup brown sugar. If you feel like making these almond cookies even healthier, you can add cane sugar or coconut sugar. Or you can skip the sugar at all and add a few drops of your
Crispy Vegan Almond Christmas Stars
Ingredients
- 2 cups almond meal
- 1/4 cup brown sugar
- 2 tsp vanilla essence
- 1 tbsp flaxseed meal
- 2 tbsp warm water
- 1 tbsp ground cinnamon
- 2 tbsp almond milk
- powdered sugar to decorate
Instructions
- Whisk together warm water and flaxseed meal. Set it aside
- In a bowl, mix together almond meal, ground cinnamon, and brown sugar. Then add flaxseed mixture and vanilla essence. If it¨s to hard to mix the dough by hand, place it in a food processor. Pulse a few times.
- Add 1 tbsp almond milk. Pulse again. Check if the dough is not too dry or not too sticky. If it seems to be too dry add another tbsp almond milk.
- Make a ball of the dough and wrap it in a foil cling. Place it in a fridge for 15 minutes.
- Preheat oven to 180 Celcius Degrees.
- Place the chilled dough in between two sheets of baking paper and roll it with a rolling pin. The dough should be around 5-6 mm thin. Don’t make it too thin or the stars will be too crispy. Cut the stars out with a star-shaped cookie cutter.
- Place the stars onto a baking sheet lined in a baking tray and place it in the oven. Bake the stars for 5 minutes. Let the cookies cool down.
- Dust the cookies with powdered sugar through a sifter.
