I didn’t post a breakfast recipe for a while. I don’t know exactly why but I have these weird thoughts about making something pink for quite a long time. So here it is, chubby pink pancakes!
For these pink pancakes skip soem unnatural colouring. All you need to use is juice from beetroot! Because beetroot juice is such a string natural colouring, plus it tastes sweet, it’s great for pancakes! Haven’t you tried it before? You should after reading this recipe!

Also, if you use self-raising gluten-free flour you make the batter rise more. I really love this self-raising flour. Not only because is gluten-free but it has never disappointed me. Anytime I use it to make something very yummy (like these Cherry cupcakes with perfect chocolate ganache!) it came out amazing!
I usually prefer using natural colouring than artifical and chemical colours. If you don’t know it, beetroot juice is an amazing antural colouring if you want to achieve a perfect pink colour!
If you want to achieve darker shade, add about 1/4 cup beetroot juice. If you want a really fade pink hade, add about 1 tbsp beetroot juice or even less!

Pink Chubby Pancakes
Ingredients
- 1 cup self-raising gluten-free flour
- 1 tsp baking powder
- 1/4 tsp sea salt
- 1/2 cup plant-based milk (almond is good)
- 1/4 cup maple syrup
- 2 tbsp coconut oil melted
- 1 tsp vanilla extract
- 2 tbsp beetroot juice (from canned beetroot)
- fresh berries for topping
- maple syrup for topping
- pomegranate seeds for topping
- dairy-free chocolate chips for topping
- sugar stars for topping
Instructions
- In a bowl mix all the dry ingredients first.
- In another bowl, mix all the wet ingredients.
- Now add all the mixed dry ingredients in the bowl with wet ingredients and whisk gently to combine.
- Set aside for about 10 minutes.
- Pour the batter in a hot frying pan and fry about 2 minutes each side. You should make about 8 chubby pancakes.
- Top the pancakes with your favourite toppings – fresh berries, pomegranate seeds, sugar stars and drizzle with maple syrup.
- Enjoy!
