Cashew and cinnamon iced coffee recipe
Preparation time: 10 minutes

Ingredients:
1 1/2 cup raw unsalted cashews
2 espressos
2 tsp ground cinnamon
10 small ice cubes
4 cups very cold water
4 dates, pitted
Cashews for garnish
Ice cubes
Instructions:
- Preparing cashews: Soak cashews overnight in hot water or leave them in hot water for 4 hours. If they are still not very soft, boil them for 10-15 minutes. Then drain them, rinse them, and drain them again.
- If you don’t have frozen water in ice cube trays already in your freezer, pour water into 10 small ice cube trays and freeze it for at least 4 hours.
- Make espressos using your home coffee machine or purchase espressos from a café.
- Blend cashews with water in a high-speed blender or a food processor. Add cinnamon and dates. Blend until very smooth.
- Add ice cubes and blend again until smooth.
- Pour into glasses and garnish with some cashews.
- Enjoy!
