Vegan pancakes are very easy to make plus they are delicious and quick breakfast. What if you make something a little bit different this and add some black colouring aka activated charcoal powder? Then voalá, you create black vegan pancakes! Doesn’t it sound amazing?
What to put on your black pancakes? What about more colourful stuff? Let’s make spirulina sauce! You can even choose what colour you want. I chose blue spirulina, but there are more colours and also more natural colouring powders, like purple acai powder or pink pink pitaya powder etc.

Black Vegan Pancakes with Spirulina Sauce Recipe
Preparation time: 5 minutes
Cooking time: 10 minutes
Serving: 8 pancakes
Ingredients:
For pancakes:
1 cup rice or besan (chickpea) flour
1/2 cup water
1/2 cup plant-based milk of your choice (I used rice milk)
2 tsp baking powder
1/4 tsp baking soda
1/4 cup raw sugar, optional
1/4 tsp sea salt
2 tsp activated charcoal powder
2 tbsp olive oil
A few fresh or frozen berries, for garnish (I used frozen raspberries)
For spirulina sauce:
2 tbsp peanut butter
1 tsp coconut oil, melted
1 tsp green spirulina powder /blue spirulina powder
1-2 tsp coconut milk
Instructions:
- In a bowl combine flour, baking soda, and baking powder. Add salt. Make a well in the middle and add water and milk. Whisk together well until the batter is smooth. Add sugar and charcoal powder. Combine well. If the batter is too thick, add a splash of water.
- Heat 1 tbsp olive oil in a frying pan and pour four small pancakes. After 2 minutes flip over and cook for another 2 minutes. Remove from the pan and do another round. You should have 8 small pancakes.
- Make the sauce: Combine all the ingredients in a small bowl. If the sauce is too runny, add a little bit more peanut butter.
- In a small plate build a tower from the pancakes and pour the sauce on the top. Place a few berries on the top.
- Enjoy your breakfast!
