If you love black beans and curry, I have great news for you. You can put these two of your favorite ingredients together and make delicious black bean curry. If you are looking for quick, simple but still very tasty dinner, this recipe will do you a favor. Black beans are also a great source of protein. 400 g or 1 can of black beans contains approximately 32 g protein.
In this photo, I also added few slices of marinated tofu. You can do that, too, if you feel like adding even more protein to this dish. I simply made marinate of 1 tamari sauce and maple syrup and then I fried tofu for 2 minutes on each side.

Ingredients
400 g or 1 can black beans, drained
1 onion, chopped
4 cloves garlic, chopped finely
1 green capsicum, chopped into slices
2 teaspoons curry powder
2 teaspoons turmeric
1 teaspoon ginger powder
1 teaspoon cumin powder
1/2 chili powder
2 tomatoes, chopped
1 tablespoon tamari sauce
1 cup water
salt
for garnish:
fresh coriander, chopped finely
red chili pepper, sliced
brown rice, cooked
Instruction
- Heat 2 tablespoons of olive oil in a larger saucepan. Add onion, garlic, and capsicum. Saute until golden. Add all the spices and cook for another 5 minutes.
- Add black beans and tomatoes. Cook for another 5-7 minutes until tomatoes soften. Then add tamari sauce and water and stir everything for 2 minutes.
- Add salt to taste. If the sauce is too thick, add another 1/2 water and boil for 2-3 minutes.
- Garnish with finely chopped fresh coriander and couple of red chili pepper slices. Serve with boiled brown rice.
